I spent a summer season working at the famed Gleneagles Hotel in Auchterarder, Perthshire.

I quickly learned that an Executive Chef is like God in his kitchen, that you never piss off the Aboyeur, and you always speak French. I got so good at it, by the end of the summer I had almost forgotten English.

There is one other person you do not fall foul of, the obligatory Italian Maître D’hôtel, as they can make your life hell.

It was great experience at the tender age of 17 and something which stayed with me for the rest of my life.

Bonjour! Merci bien for the honorable mention! I can’t tell you how surprised I was when I clicked over to your blog. I should be back at the restaurant cooking in two months. My work permit has been approved for next month, but the restaurant is closing for July and August. (sigh) Not to worry, I have some interesting cooking ventures up and coming. Thanks again, and gros bisous, Ms. Glaze
