This month, Summer Miller is back and excited to share her family’s meal plans for December. Happy holidays, everyone!

Some days dinner inspiration comes together without much thought, while others you stand at the kitchen counter blankly staring to a cupboard full of ingredients with no idea what to pull together.

Not to worry, we’ve all been there.

We are now fully into the holiday hustle and bustle. This week’s meals are all about keeping it simple and straight forward. We want to you have plenty of time after dinner to eat…er…bake dozens of holiday cookies, after all.

Meal Plan 3

Turkey Taco Salad

1 Turkey Taco Salad: Ground turkey and fresh veggies come together in this fast and easy weeknight meal.

 

Roasted Red Pepper Potato Soup

2 Roasted Red Pepper and Potato Soup: Soup and sandwiches are more than just lunchtime fare. Pair this creamy red pepper soup with a grown-up version of grilled cheese sandwiches.

 

Broccoli Beef

3 Beef and Broccoli Stir Fry: Slice your flank steak thinly so that it cooks quickly. Serve it alongside our “rice without a recipe” — make a double-batch so you have some for tomorrow’s meal too!

 

Salsa Verde Chicken Bake

4 Salsa Verde Chicken Bake: It doesn’t get much easier than pouring a jar of your favorite salsa over some chicken and popping it in the oven. Serve with rice leftover from yesterday’s meal.

 

Sesame Soba Noodle Bowls

5 Soba Noodle Bowls with Spinach and Poached Eggs: Friday nights are meant for a hot bowl of steaming noodles in under 30 minutes.

    I do the salsa verde with pork also and serve with corn tortillas, fresh chopped onions and cilantro with a squeeze of lime.
