10 Ways Use a Pint of Berries This Summer

Blueberries! Strawberries! Raspberries! Here are all of my favorite ways to use fresh summer berries, from Blueberry Crumb Bars to Strawberry Yogurt Pops.

Blueberries! Strawberries! Raspberries! Just give me ALL the berries!

The love for sweet, ripe, juicy berries and other fruits has always been strong in my family — my mom often says that the one thing she could be sure my brother and I would eat when we were kids was the fruit salad.

For me, the farmers’ market this time of year is like walking into a candy store. So many choices. So little time.

While I can certainly chow down an entire pint of fresh berries while standing at the kitchen counter, I do occasionally like to make something special with my berry-licious haul. Below are some of my very favorite ways to make the most of those beautiful pints from the farmers’ market.

What are you favorite ways to use summer berries?

Easy Strawberry Shortcake Recipe

Do not — I repeat, do not — let the summer go by without at least once having strawberry shortcake for dessert. This classic dessert is so simple that sometimes I forget about it in the rush to make whatever mouthwatering dessert has most recently crossed my Instagram feed. Don't let this happen to you!

Blueberry Cake

This cake has over 50 comments and 19 reviews for a good reason! It's incredibly easy to make and looks gorgeous put out on a picnic table. I can't think of any better way to highlight summer blueberries.

Strawberry Yogurt Pops

It's ok to call these breakfast, right? I certainly am. When it's already hot at 9am, a breakfast pop is definitely what I want. Sometimes I add a layers of granola to the popsicles for some extra substance. The granola softens a bit in the freezing process and ends up with the texture of a chewy oatmeal cookie.

Panna Cotta with Summer Berries

Have you ever made panna cotta? It seems so fancy but is actually really easy — just 20 minutes of prep time! I love it as a make-ahead dessert for summer backyard parties.

Blueberry Crumb Bars with Shortbread Crust

I've already made these crumb bars twice this summer. I'm always amazed at how jammy those juicy, ripe blueberries become. In my next batch, I'm adding a layer of cream cheese!

Chocolate Chip Pancakes with Raspberry Sauce - close up of pancake stack

I just love long, lazy weekend mornings during the summer. Yes, these chocolate chip pancakes are decadent, but these are the kinds of meals that make summer vacations memorable.

Strawberry Ice Cream Recipe

Hubba hubba, this strawberry ice cream is everything I'm looking for in a creamy, fruit-filled dessert. This recipe got rave reviews from our team of recipe testers. Don't you love that pink color?! A combo of pureed fresh strawberries and cooked sauce gives it that lovely hue and its delicate strawberry flavor.

Blackberry Cobbler with biscuit cobbler topping

We had some big, gnarly, thorny blackberry bushes growing by our house as a kid. As hot and scratchy as it was to harvest a whole bucket of berries, it was worth it for what was in store for dessert. Cobbler for days!

Berry & Banana Terrine

Talk about a show-stopper! This retro-cool dessert definitely puts those summer berries on display, doesn't it? Serve it in slices with a dollop of cool whipped cream.

Sangria with Strawberries and Sparkling Wine

When summer strawberries hit their peak, they are so very sweet and so very good in cocktails like this one. You barely need any sugar to sweeten things up. Make this party drink with or without the booze and pass around the glasses.
