Some of you may have already entered the Back-to-School Zone, while others (like me) are seeing it just around the bend.

This is the moment when many of us become determined to shake up our dinner routines and find some new go-to recipes to insert into the rotation – dinners that the whole family will greet with enthusiasm and that are easy on the cook — and whoever gets to clean up after!

In most parts of the country we are still enjoying the tail end of the most robust produce season of the year. So even as we approach fall, we are still very much in the mindset of produce-centric meals

We’re also still happy to use our grills and eat on the lighter side – we know that those one-pot meals and rich roasts will be coming along soon enough.

Angel Hair Pasta with Clams and Cherry Tomatoes

My family loves the delicate silkiness of angel hair, so whatever I toss with this pasta usually is well-received.  This delicate sauce of cream and lemon juice is such a great match for the thin strands, and when some fresh herbs, plump clams, and Parmesan enter the picture….well, lets just say it’s a pretty picture.  Serve with a simple green salad on the side.

How to Make Vegetable Fried Rice

My younger son Charlie will eat almost anything if it comes in the form of fried rice.  This is a vegetarian version, and no one even mentioned missing the meat.  You can add a couple of tablespoons of hoisin or oyster sauce or a couple of teaspoons of sesame oil along with the soy sauce for a more flavorful stir-fried rice dish.

Apple Cider Honey Glazed Salmon

As apple-picking season gets underway, my kitchen is never without a bushel or two of apples, and my fridge is never without a jug of  apple cider.  The combination of the honey and the cider results in a beautifully caramelized glaze.  Wilted spinach is included in the recipe, and the whole shebang would be great served over fluffy white rice.

Grilled Shrimp Tacos with Avocado Mango Salsa

This is a stunner of a dish, both in terms of appearance and the popping flavors inside the tortillas.  The salsa is amazing, a combo of fresh mango, avocado, red onion, jalapeño, and lime juice.  You can cook the shrimp any way you like, if you don’t want to grill them.

Best Fried Chicken Recipe With Buttermilk

The secret to excellent fried chicken is an overnight soak in buttermilk, which helps tenderize the chicken and getting the oil to the right temperature.  There is something about a fried chicken meal in the summer – and cold fried chicken is one of the best leftovers on the planet.  Invite some friends and serve with Simple Vegetarian Pasta Salad and Spicy Cole Slaw, two of my favorite recipes from my site The Mom 100.

    Looks great! There’s a mistake in the lead in for the Angel Hair. It mentions plump shrimp, should be plump clams. :)
