Meal Plan for February Week 3

I don’t know about you, but we had a lot of Valentine’s treats around the house last week, so I’m excited about jumping into the kitchen to get some real food back on the table!

For this week’s meal plan, there’s quite a bit you can tackle over the weekend to make your dinners during the week a little easier.

Make the Chicken Mulligatawny Soup when you have a free moment over the weekend and you won’t have to give a thought to Monday’s dinner. It will keep in the fridge for several days and reheats well.

Likewise, the turkey meatballs are easy to make in advance. You can even freeze them — just put them in the refrigerator to thaw the night before you plan to eat them.

We’ve also got a quick sheet-pan supper and some easy pressure cooker tacos in the mix, plus a simple sandwich that will remind you of summer.

We can do this! Here’s the plan:

Mulligatawny Soup

This curry-based chicken soup is always a crowd-pleaser and while the ingredient list looks long, it’s largely comprised of simple staples like onions, carrots and celery. Use store-bought stock to save on time, and serve with a crusty baguette or warm, buttered naan.

Turkey Meatballs

I’ve made my fair share of turkey meatballs and find they can often be dry, but this recipe is a true winner! These are tender, flavorful meatballs that you can form into any size (I always make a handful of small ones for our toddler son). Serve with marinara sauce and your favorite pasta noodles or polenta.

Panko-crusted Salmon

When the craving for a simple salmon dish strikes, you’re well on your way with this weeknight favorite. This recipe comes together in less than 30 minutes, and is super tender and flaky. I love the Avocado Beet Salad with Citrus Vinaigrette as a colorful way to round out this satisfying meal.

BLT with Arugula

Of course, the tomatoes we can find this time of year aren’t going to be nearly as good as those we can get at the height of summer. But hot house tomatoes aren’t bad, and a BLT in the middle of winter is a nice treat. The arugula adds some zippiness to the sandwich, as well!

This pulled pork practically makes itself in the pressure cooker, which is especially welcome after a long work week. I love the warm spices here (cinnamon and clove), and the excuse to break out all my favorite taco toppings and accompaniments.

    Thank you so much for providing these. I am really enjoying these weekly meal plans. We are a small household and 2 or 3 is all we need for the week. This is just fabulous because when I’ve done the meal planning in the past, it seems to me the most tedious part, but now I’ve meal plans for months to come! P.S. Love the changed format!
