Meal Plan for July Week 2

This month, Summer Miller is back, sharing her meal plans for July. Summer is a mom, a full-time food writer, and also helps test the fabulous recipes we bring you every week at Simply Recipes.

I ease into my work weeks like I ease into my mornings – slow and simple. I do my best to leave my meetings to the other days of the week, and let Mondays serve as the day I set myself up to take care of odd and ends, dig out from emails that have accumulated over the weekend, and take stock of the week ahead.

When I transition to dinner on Monday nights, I take the same approach. I want to hang out with my kids and husband, find out how their days went and see what lies ahead for them. I don’t want to be distracted by over complicated menus.

With easy in mind I kick of this week with a cheese quesadilla and I finish it with chicken on the grill and a light, refreshing beer cocktail. Cheers!

Black Eyed Pea Salsa

The great thing about making your own salsa is you can adjust the heat to your liking. If you like it spicy, get crazy with extra jalapenos. If you like a little less heat add more of a mild pepper like poblano. Paired with cheese quesadillas, this makes a complete – and simple – meal.

Veggie Burger Recipe with Green Goddess Dressing

Looking for a way to add more vegetables to your diet? Try this veggie burger with an herby, creamy dressing. They hold up well on the grill and will satisfy even the biggest meat eaters among you. Pair it with a colorful, and slightly sweet carrot salad.

Angel Hair Pasta with Clams and Cherry Tomatoes

Canned clams make this a time-saving weeknight meal, while the fresh basil and tomatoes make the most of what’s in season.

Slow Cooker Mexican Pulled Pork

All you need is 10 minutes in the morning to prepare this slow cooker meal, and dinner will be almost ready when you walk in the door. Just prep the taco toppings and serve.

Grilled BBQ Chicken

It’s time to invite some friends over. Baste some chicken in a tangy barbecue sauce while sipping on this light beer cocktail. To complete the meal, grilled lettuce is a fast and easy side to this Friday-night-get-together-menu.
