This month, we welcome back Marta Rivera for more of her meal plans. Marta is a trained chef, mom of twins, and Army wife – and she is also one of our Simply Recipes recipe testers!

Mid-June in Central Texas brings a whole new meaning to “The Dog Days of Summer.” It is HOT, y’all!

Because of that, I’m looking to create meals that require little to no heat in the kitchen, those that will cool me down, and others that I can set and forget. I’m so glad for sweet tea and cool breezes!

Vietnamese Noodle Bowls with Chicken

To avoid heating up the kitchen, grill the chicken for this recipe instead of roasting in the oven! Also, the great thing about the thin vermicelli noodles in this recipe is how quickly they cook. Mondays are also the day I do prep work for the rest of the week: cutting veggies, shredding cheeses, cooking rice, etc. This is a must for me, especially in the summer when exhaustion is at an all-time high by dinner time.

Cheese Enchiladas

These vegetarian enchiladas are not only a complete meal on their own, but they're also quite fast to put together and only require 15 minutes of oven time. During the summertime I like to have the kids help out in the kitchen as a way to build a love of cooking. My twins enjoy helping me roll the enchiladas…and swiping some cheese in the process, of course!

Skillet Chicken with Bok Choy

Skillet chicken recipes like this are one of my favorite quick-fix meals during the hotter months of the year. Bok choy has a tender leafy top that wilts like spinach, but it stays crisp and crunchy at the bottom, even after cooking. Getting a pot of rice going prior to beginning this recipe means my meal is done in thirty minutes.

How to Make Shrimp Scampi

There couldn't be an easier way to wind down the week than this recipe. I try to keep shrimp and peas in the freezer for quick meals like this one.

Slow Cooker Dr. Pepper Pulled Pork

Slow Cookers are heaven-sent during the dog days of summer. Letting this Dr Pepper Pulled Pork cook while I'm out of the house means succulently-saucy sandwiches for dinner and I don't heat up the kitchen. The perfect pairing? Cool coleslaw and kettle-cooked potato chips. Don’t forget a crisp dill pickle!

    I enjoy your vegetarian recipes, because I don’t eat meat. The enchilada receipts looks good and I book-marked it to try. THANKS. I hope to see more meat-less dishes.

      Although I’m not a vegetarian, I love to throw a mix of non-meat meals into my meal plans to balance out the week. I’m glad it’s helpful!

    Thanks for the recipes….they look great for those who eat meat and dairy. Have you noticed how many more vegan folks there are out there? Lots of vegan entrees at places like Costco. Especially in CA and the west coast. Less meat, less dairy will be the norm some day, I predict. Perhaps not in my lifetime (I’m the grandma!) but for sure in the lifetime of our kids.
