This month, we welcome back Marta Rivera for more of her meal plans. Marta is a trained chef, mom of twins, and Army wife – and she is also one of our Simply Recipes recipe testers!

In many parts of the United States, school children are on or headed into Spring Break, and so many parents, both stay-at-home and working, struggle with meal plans to accommodate the break in routine.

As a homeschool mom, myself, I’m used to preparing at least three meals a day, but many days, I leave my almost-teenage kids to plan and prepare their own lunches, or rope them into helping make dinner. For me, it not only teaches them to be self-sufficient, but it gives me a break from having to make a whole meal.

This week I’m planning for meals that both taste amazing and that aren’t too difficult for young ones to help prepare if they’re home on break. Might as well keep them occupied, right?

Apple Chicken Quesadilla

The simple quesadilla gets a unique upgrade with the addition of sweet apple and a sharp cheddar in this recipe! Older kids can whip this up in a jiffy on their own, and they'll not only have a healthy meal, but they’ll also learn that you can customize and create new meals from the old standbys. Omitting the chicken will leave you with an equally delicious vegetarian option.

Pasta with Turkey Meatballs and Vegetables

My children love to help out in the kitchen, and when they’re not doing schoolwork, I get them into the kitchen to teach them a thing or two about cooking. Helping with rolling these meatballs, for instance, is a great way to teach portion control and consistency. The orecchiette in this recipe always seems to be a hit with younger kids, and older ones can responsibly boil the water and cook the pasta. Make an extra batch of these meatballs for freezing and you’ll have a quick go of dinner in the future.

Greens Eggs Ham Sandwich

No, it’s not what you think! There’s no dying of eggs here. There’s just an upscale version of a childhood favorite. Melty gruyere and ham get a boost of flavor and color with the addition of greens. I prefer to use a baby chard, but spinach work just as well. Pair this sandwich with a robust tomato soup like this one, which has the addition of beans for more protein and fiber!

Salmon Patties

The kids and adults in my house both love these quirky little throwbacks to the past! These kid-friendly patties are quick-fixes and versatile. I like to put mine on a salad, the hubby likes his on burger buns and the kids love turning theirs into patty melts.

Slow Cooker Shredded Chicken

Set it and forget it. That’s the name of the game by the end of Spring Break Week. Creating a taco bar and letting everyone personalize their own plates makes things even less stressful. Next week, it’s back to normal! And since we survived this week, we should reward ourselves with the Best Brownies Ever.

    Love this weekly planner! And especially this week! Anyone who serves a grilled Greens, Eggs, and Ham, Grilled Cheese Sandwich for dinner is my kind of cook! With my GF and less meat diet, I just sub GF ingredients and red meat alternatives like dry sautéed mushrooms, TVP and such as I build the recipe. Having Elise’s tried and true recipes along with the many guest chefs has helped me to eat healthy and relaxed. Having this weekly planner makes the even easier!

    Thanks for the inspiration! I’m in the southern hemisphere where Autumn is just beginning (still 35 degree days but it will cool off soon!) so these recipes offer some interesting diversion from the BBQ and salads we’ve been having. My kids love Mexican food, so they’ll love the slow cooker tacos.
