Meal Plan for September Week 2

This month, please welcome Aaron Hutcherson and his September meal plans! Aaron is a regular contributor here on Simply Recipes and the blogger behind The Hungry Hutch.

Sorry to burst your bubble, folks, but this is officially the last full week of summer. *Starts sobbing uncontrollably.*

But don’t fret! There are still plenty of warm days ahead for most of the country. I’m looking forward to plenty more weekends in the park and al fresco meals with friends after work.

My schedule is pretty light at the moment, but give it a day and I’ll soon find myself trying to juggle all of the activities I want to try to squeeze in this week. I tend to book myself more than I probably should, but I’m slowly learning to say no to things and set aside time for me. I find I function much better as a friend, roommate, family member, and employee when I have a good amount of me time to reset and recharge.

My philosophy in life is to try to always make the most out of every situation. So for this week and the impending sweater weather (I’m still not quite ready for layering), that means lots of grilling, tons of fresh fresh produce, and a nice cocktail (because I could always go for one of those).

Gluten Free Greek Pasta Salad

Most people tend to think of pasta salad as a side dish, but it can function as a full meal on its own, too. For those wanting to add some animal protein to the meal, chicken or shrimp would make a great addition to this salad. And any leftovers will make for a nice lunch to take to work.

Eggplant Parmesan

When we talk about what vegetables are in season this time of year, we tend to leave eggplant out of the conversation. There's nothing better than a classic eggplant parm, and this recipe fits the bill. All that's missing is some nice, toasty garlic bread.

Steak Salad

It's time to fire up the grill for this steak salad with arugula and Parmesan cheese – it makes a quick and satisfying meal. And since you made it halfway through the week, why not enjoy a watermelon margarita (or two) to celebrate?

Chipotle Grilled Chicken with Avocado Sandwich

Flavored with chipotle and lime, these grilled chicken sandwiches are cinch to throw together. I think it would only be fitting to serve them with a cold beer or glass of iced tea and a side of coleslaw.

How to make seafood paella

Let's end the week with a bang! Invite some friends and family over for a wonderful feast of grilled paella. You can save yourself some of the effort of hosting by asking someone else to bring the dessert. (Might I suggest this blackberry pie?)

    The recipes you list never play one off the other. I see your “6 Things to Make on Sunday for Easier Weeknight Meals,” but your suggested recipes do not reflect that recommendation…
