We tried the pasta with arugula and tuna. Let me first say that I’ve been told that I’m a food snob by many people, which is why when I thought of tuna, arugula and pasta, I first said No Way!! However, during the week I needed to make a quick meal and thought, Fine, I’ll try it. OMG!!! It was amazing. Only change we made was added a little of parm to top the pasta. It’s a very fresh, light and quick meal. The arugula and red pepper flakes add a nice heat. But the best part are the leftovers!!!! The flavors increase so much the next day. Make this meal when you’re short on time, but make extra for lunch!!!

I think these recipes are too high in carbs. Can’t we see something new without it being part noodles? Arlene
Hello Arlene, this is a list of pasta recipes, which by their very nature are high in carbs if you are using regular pasta. Sometimes you can substitute regular pasta with a special low carb pasta, just google low carb pasta for brands.
There are plenty of creative ways to replace pasta if you’re concerned about your carb intake. Get a spiralizer and replace the pasta with zucchini noodles or use spaghetti squash or use Japanese shirataki miracle noodles made from yams or put any of these recipes on brown rice, quinoa or even a broccoli slaw blend easily found at the grocery store. Just because the recipe says to use pasta doesn’t mean you have to ;)
Arlene, if you want low carbs, perhaps your time would be better spent not reading a list of pasta recipes? For some of us, a higher carb diet is required and I appreciate finding a collection in one location.
These pasta dishes sound delicious, I want to try them all!
