12 Meals to Make with Rotisserie Chicken

Pick up a rotisserie chicken on the way home from work tonight and dinner is practically done. Here are 12 meals that take full advantage of that chicken and make your life lots easier.

If there’s anything that will make your life 25x easier, it’s rotisserie chicken. It’s inexpensive, jam-packed with flavor, and can be used in about a thousand ways.

I love buying a few at a time and freezing what I don’t immediately need, so that I can just pull out a bag of chicken whenever I need to get dinner on the table FAST.

I use rotisserie chicken for enchiladas all the time, but making your enchiladas in a skillet bumps of the easy factor significantly. This skillet sensation is ready in about 30 minutes and makes for a great freezer meal too!

    No mention of all the delicious chicken broth from them bones. Over night in the slow cooker on low covered with water. Bay leaves, s&p, garlic ect.
