    Rotisserie chicken soup is our go to easy, warming meal. Use the carcass to make a really flavorful broth (after roasting in the oven and simmering for a few hours with a roasted mirepoix, keeping the foam removed, strained and reduced. Easy warm up the stock add diced onions, carrots and celery along with the shredded chicken and maybe some noodles if your not counting carbs and it’s some of the best soup you can get.
