Hi, Niru! We have some lovely vegetarian mango recipes on Simply Recipes. If you type Mango into the search bar more will come up, but here are a few of my favorites: Mango Avocado Salsa , Mango Lime Sorbet , Curried Egg Salad with Mango Chutney.
Having grown mangoes in my gardens both in India and Thailand I can assure you that the variety and ripeness of mango used in any recipe is of ultimate importance. You do need to be more specific as to variety used in your recipes.
