With the start of a new season, we can’t help but feel excited about a clean slate and getting back to basics. And the ingredient on our minds right now: fresh California mushrooms.

Mushrooms make a great after school snack sliced as is, but of course we love them sautéed and folded into omelettes in the morning, grain bowls for lunch, and buttery pasta in the evening.

Why California mushrooms in particular? They’re grown with love from farmers who care about the process from start to finish — and those blue skies certainly don’t hurt either.

To inspire your own fall meal planning, we pulled together our five favorite recipes made with fresh mushrooms: everything from a creamy pasta the whole family will love to quick mushroom quesadillas and a vibrant stir fry.

Vegetarian Lasagna

If you're looking for a vegetarian main dish that even meat eaters will love, this lasagna is the one! Made with hearty shiitake and cremini mushrooms, spinach, and ricotta, it feeds a crowd — and leftovers are even better the second day!

Marsala Glazed Mushrooms

Want to know the trick for sautéing mushrooms and getting the maximum mushroom flavor? We love cooking them down with a little butter, thyme and Marsala wine — once you try this method, you'll be a convert, too!

Quesadillas are a great go-to quick weeknight meal, and to bulk them up, add meaty mushrooms to the mix. If you're feeding a crowd, feel free to make these up to a day in advance and warm quickly in the oven before serving.

Comfort food at its finest, this creamy pasta is made with baby cremini and shiitake mushrooms, and it couldn't be easier to make. Serve with a green salad or roasted veggies to round out the meal.
