Meal Plan for July Week 5

Here's your meal plan for the last week of July! We've got Veggie Shakshuka, Skillet Pizzas, Cod with Tomatoes, and more!

This month, Summer Miller is back, sharing her meal plans for July. Summer is a mom, a full-time food writer, and also helps test the fabulous recipes we bring you every week at Simply Recipes.

And just like that we are finishing off the month of July! The official end of summer is still a couple of months way, but the back to school sales are everywhere reminding us the end is near. Soon fall sports and homework will replace swimsuits and sprinklers.

With that in mind I want to make the most of these final carefree days. My garden is packed with tomatoes, basil and cucumbers at this point in the season, and this week’s meal plan puts them all to good use.


Meatless Monday never tasted so good! Shakshuka is a simple one-pan meal. Eggs are poached in rich tomato and vegetable sauce. Drizzling the eggs with pesto brightens the flavors!

Dinner in a minute with this crisp and crunchy salad. Use pre-cooked chicken and marinade it while you get the other ingredients ready!

Tomato and Mozzarella Skillet Pita Pizzas

Garden tomatoes are perfection right now! You can use any kind of tomato, but heirloom varieties boast an impressive color display. Use them to dress this 30-minute meal up a bit. This recipe uses pita as a stand in for traditional pizza crust.

Turkey burger recipe

Save yourself the extra dishes and light up the grill for some turkey burgers. Try to find ground dark meat to make a juicier burger. Hot days and grilled food pair well with light and refreshing beverages.
