Meal Plan for March Week 4

Here's your meal plan for March Week 4! We've got Spinach Artichoke Quiche, Greek Lamb Burgers, Herb Roasted Chicken Thighs and more!

This month, we welcome back Marta Rivera for more of her meal plans. Marta is a trained chef, mom of twins, and Army wife – and she is also one of our Simply Recipes recipe testers!

Can you believe that we’re already at the end of March?! I don’t know about you, but it seems as if the new year is flying right by!

Since Easter is next weekend, you may need meals during the week ahead that you can prepare quickly so you can focus on hosting or enjoying your loved ones.

We don’t normally do big meals for Easter at my house, and since we’re a military family and far from relatives, it’s usually a low-key holiday in all respects. Still, I like to make sure that if any of my husband’s soldiers need a place to remind them of home, ours is it. I’m planning to make a nice meal for next week’s Sunday dinner and enjoy being all together.

Spinach Artichoke Quiche

Who says quiche is only for brunch? My favorite quick-fix meal of our busiest day is a quiche like this one with a salad alongside. I mix the egg custard and pre-bake the pie crust the day before, and when dinnertime rolls around, I just assemble it and throw it in the oven to bake. While it’s baking, I prepare my salad, and dinner’s ready to go. This meatless version is perfect for days when you need something light, yet filling.

Spring Succotash

No worries, this isn’t the unappetizing canned version most of us grew up with. This  succotash is an homage to spring: fresh, vibrant, and packed-full of flavor. Since there's ham in this version, it provides more than enough protein for my family’s dinner. It’s surprisingly filling, but if you feel like you need something more, serve it with a nice crusty artisan loaf or grilled chicken.


Edamame can be substituted for the fava beans if you can’t find them fresh. If you like to take your lunch to work, doubling the recipe will not only serve as an entree for tonight’s meal, but will give you helping to take the next day.

Pasta with Tuna and Arugula

Canned tuna doesn’t have to be relegated to mayonnaise-heavy sandwiches. This light pasta dish proves the point that common, everyday ingredients can be leveled-up with a little bit of culinary creativity.

Greek Lamb Burgers with Tzatziki Sauce

There’s always room for a burger on the menu! Since lamb can be found at great prices this time of year, why don’t we switch up our usual burgers for this Mediterranean version? The refreshing tzatziki sauce can be made a few days before to allow the flavors to marry and deepen. I like to serve these burgers packed into toasted pitas.

Herb Roasted Chicken Thighs with Potatoes

My favorite way to wind down at the end of the week is to cook a healthy meal that doesn’t require too much fuss. Even if the dish has a longer cooking time, I don’t fret over it -- especially since most of that cooking time done in the oven and I can be hands-off. Chicken thighs and potatoes are also both very economical ways to make a meal for you family. This meal, with its easy prep and uncomplicated baking, is my perfect Friday night supper.
