Meal Plan for September Week 2

Sorry to burst your bubble, folks, but this is officially the last full week of summer. *Starts sobbing uncontrollably.*

But don't fret! There are still plenty of warm days ahead for most of the country. I'm looking forward to plenty more weekends in the park and al fresco meals with friends after work.

My schedule is pretty light at the moment, but give it a day and I'll soon find myself trying to juggle all of the activities I want to try to squeeze in this week. I tend to book myself more than I probably should, but I'm slowly learning to say no to things and set aside time for me. I find I function much better as a friend, roommate, family member, and employee when I have a good amount of me time to reset and recharge.

My philosophy in life is to try to always make the most out of every situation. So for this week and the impending sweater weather (I'm still not quite ready for layering), that means lots of grilling, tons of fresh fresh produce, and a nice cocktail (because I could always go for one of those).

    When we talk about what vegetables are in season this time of year, we tend to leave eggplant out of the conversation. There's nothing better than a classic eggplant parm, and this recipe fits the bill. All that's missing is some nice, toasty garlic bread.
