Simply Recipes 2019 Meal Plan: April Week 3

I’m in full-blown party mode here! April is full of celebrations for our family. Besides Easter, two family members have birthdays!

As part of the celebration, the guest of honor is tasked with choosing the family dinner for the night. More likely than not, the birthday falls on a school/work night and the meal has to fit within the constraints of a busy schedule.

For this week’s meals, I chose dishes that feel special, while fitting into the weeknight rush. I’d eat these any day of the week, no special occasion needed.

Spanish Baked Chicken

Hailing from Spain, this baked chicken dish is packed with flavor. The chicken is marinated in a flavorful combination of spices, oil, and wine creating a glorious sauce. Marinate the chicken the night before to save time! The wine can be replaced with chicken broth and lemon juice if needed. Serve with Spanish Rice for a festive side dish.
