I’m in full-blown party mode here! April is full of celebrations for our family. Besides Easter, two family members have birthdays!
As part of the celebration, the guest of honor is tasked with choosing the family dinner for the night. More likely than not, the birthday falls on a school/work night and the meal has to fit within the constraints of a busy schedule.
For this week’s meals, I chose dishes that feel special, while fitting into the weeknight rush. I’d eat these any day of the week, no special occasion needed.
