Welcome to August and the long sunny days of summer! When I was younger my best friend had a huge garden. One of my favorite childhood memories is spending the afternoon with her picking and eating raspberries, sugar snap peas and tomatoes by the fistful.

Now having tried my hand at gardening a few times, I realize how many hours of planning and tending it required to grow such a bounty. I have dreams of one day growing more than the basil plant currently on my deck. Until then, I’ll lean into the farmers market and fresh produce aisle for my summer meals.

In honor of all the amazing gardeners, this week’s recipes treat the garden harvest with the same love and care that you have.

  • Chicken Pozole Salad

    Pozole, a hearty Mexican stew, is usually reserved for the colder months but not anymore! Cumin and chili powder are used to season the chicken, which is then sautéed along with hominy and placed atop a pile of fresh garden vegetables. Cotija and lime vinaigrette round out the flavors. Serve with your own homemade tortilla chips.

  • Weeknight Pasta with Zucchini, Eggplant, and Peppers

    This dish is similar to pasta primavera and endlessly versatile depending on what vegetables you have on hand. Serve with plenty of shredded Parmesan and keep the Italian theme flowing with a simple dessert of Panna Cotta with Summer Berries.

    Pies bursting with fresh fruit is a summer staple! A savory version using garden ripened tomatoes is a no-brainer. The pie crust can be store bought or homemade, either way this pizza-esque dinner will be made again and again. Serve with Farmers’ Market Salad with Peaches, Goat Cheese, and Basil.
