The big winter holidays are almost here, so that means it's really crunch time for everyone who celebrates.
While you're making your lists and checking them twice, you still have to put dinner on the table.
This week's recipe lineup is a pretty good representation of the sorts of things I enjoy eating during this time of year. I don't really feel like putting too much extra effort or thought into dinner because I’m so busy with everything holiday-related.
This week I’m digging into a couple of hearty pastas, a cheesy casserole, a quick stir fry that comes together in minutes, and soup so I can eat the leftovers for lunch.

Creamy Shrimp and Broccoli Fettuccine
Elise Bauer I love the simplicity of this recipe. Top the pasta with a little Parmesan cheese, and don't use all the wine in the sauce! Enjoy a glass while you eat this bowl of pasta.

One-Pot Chicken and Rice Soup
Aaron Hutcherson I created this recipe and it’s one of my favorites—it's easy, quick, and delicious! Plus, it freezes well for when you're under the weather and in need of something warm and comforting.

Kale, Mushroom, and Cheddar Bake
Elise Bauer I love a good casserole, and this one is sure to please. It has kale, mushrooms, bread, and cheese—what’s not to love? I'm sure it would be great with whatever vegetables you have on hand.

Pork Stir Fry with Green Onion
Elise Bauer This pork stir fry cooks in a matter of minutes. Feel free to substitute shrimp or chicken for the pork. You could also add in extra veggies. Serve with some white rice.

Cheesy Hamburger Pasta Skillet
Megan Keno I used to love the boxed version as a child, but now you can make your own version from scratch. Grab your skillet. Dinner will be on the table in no time.
