February Week 2 Meal Plan

It’s the week of luvvvvv!! I know, I know, a lot of people feel like Valentine’s Day is a commercial plot to get us to spend money, but I’m a closet romantic so I use the holiday to spoil my family with delectable, “hug-on-a-plate” meals.

It’s my love language, what can I say?

  • Black Bean Soup

    Black Bean Soup is a great way to begin the week (especially if you have an Instant Pot) because it’s not a fussy recipe. If you are home all day, let it simmer away on the stove. If you have an Instant Pot, get this done in a jiff. If push comes to shove, you can substitute canned black beans for the dried. I serve mine bowls of soup with a dollop of sour cream and tortilla chips.

    Oddly enough the way you cook a meal can translate love to those whom you serve it to. Switching up my traditional broiled salmon for this Ginger Soy Steamed Salmon will make a great impression on my family. I make this an easy meal by serving it with wilted baby bok choy and steamed rice.

    My favorite part of this week’s meal plan are these Rosemary Crusted Lamb Chops, which are cooked in 10 minutes! What better way to celebrate Valentine’s Day than with a gourmet meal made in less time than it takes to get gussied up to fight in a restaurant? Serve these with a side of mashed potatoes and Roasted Broccoli with Parmesan.

    Let’s end the week with something creamy and comforting. This Easy Chicken Mac and Cheese comes together quickly (a bonus on Fridays when we’re tired from the week) and definitely satisfies the need for comfort food. Serve it with a big ol’ side salad to get some green on the plate.

    Bonus recipe! Nothing says love quite like chocolate, right? This Chocolate Cream Pie is made with real milk and comes together in a snap in the microwave (yes, the microwave!). Just be sure to plan ahead because this needs a few hours in the fridge to set.
