It’s the week of luvvvvv!! I know, I know, a lot of people feel like Valentine’s Day is a commercial plot to get us to spend money, but I’m a closet romantic so I use the holiday to spoil my family with delectable, “hug-on-a-plate” meals.
It’s my love language, what can I say?

Black Bean Soup
Elise Bauer Black Bean Soup is a great way to begin the week (especially if you have an Instant Pot) because it’s not a fussy recipe. If you are home all day, let it simmer away on the stove. If you have an Instant Pot, get this done in a jiff. If push comes to shove, you can substitute canned black beans for the dried. I serve mine bowls of soup with a dollop of sour cream and tortilla chips.
