February Week 4 Meal Plan

While most of the country may buried in their puffy coats, here in Central Texas, I’ve been sporting flip-flops and Bermuda shorts for a good while. Nevertheless, I’m feeling the need to usher in Spring by introducing a couple of recipes that are lighter fare. Most of these are great next day for lunch--even cold. For me, that’s a bonus.

  • Roasted Red Pepper Potato Soup

    Roasted Red Pepper Potato Soup is surprisingly light in spite of the use of cream in the recipe. I grill a bunch of cheese sandwiches for the kiddos, while me and the hubby enjoy our bowls with a green salad.

  • Mom's Ground Turkey and Peppers

    Light isn’t limited to the type of food, it can also refer to the preparation and cost of a recipe- at least in my opinion. Mom’s Ground Turkey and Peppers is what I like to call a “One-Pot Wonder.” When we’re cutting back on carbs, I double the recipe and serve it on its own. If we’ve been doing well (i.e. going to the gym), I spoon it over steamed rice.

  • Bacon-Wrapped Stuffed Pork Tenderloin

    The fact that this Bacon-Wrapped Stuffed Pork Tenderloin tastes so good and is still ready in less than an hour is a miracle--I’m here for it! The herb stuffing transports me to spring and the upcoming warmer months. The flavor just makes me happy. Serve this with a side of mashed potatoes to catch all of those succulent pan drippings.

  • Quick and Easy Bolognese Sauce

    Let’s end the week with a big pot of bolognese and some pasta. This version of the classic Italian sauce is quicker than the traditional and ready in about an hour. Also did you know that bolognese is made with milk?! It gives the sauce a richness and slightly sweet flavor.

  • Coffee Ice Cream

    Coffee Ice Cream feels just right for this in-between season when we still want cozy flavors, but are also looking forward to warmer weather. I’ll make this at the beginning of the week and dole out scoops throughout the week. (Make it with decaf coffee if you're planning on this being an after-dinner treat!)
