I do think the shorter days, and the fact that it’s getting dark at 4:30 in the evening, is beginning to take its toll on me.
I’m making meals this week that bring comfort, but some that are also more hands off. Nothing beats the winter blues like cuddling up with your beloved ones, and easy meals help make that a reality.
Slow cooker meals along with one-dish meals take away a lot of the stress that surrounds mealtimes. Prep vegetables by slicing and dicing everything you’ll need for the week. Store them in food storage bags in the fridge, that way when dinnertime comes, meals will be less time consuming.
