Simply Recipes 2019 Meal Plan: July Week 1

We're mixing it up with this week's meal plan! Korean Beef Bulgogi Sous Vide-Style, German Pork Burgers, Spicy Grilled Chicken Tacos, and back to basics with Greens, Eggs and Ham Grilled Cheese!

This month, we welcome back Marta Rivera for more of her meal plans. Marta is a trained chef, mom of twins, and wife to a newly-retired soldier!

The first week of July means my twins turn another year older. I cry, but they rejoice because they know their birthday week means Mom is making whatever they want.

I have no qualms about indulging my babies on their special day and I’m notorious for turning it into a week-long celebration revolving around food.

Many of this week’s recipes are an homage to their lives. Would you be so kind as to help me wish the Wonder Twins a happy 14th birthday?

Spicy Grilled Chicken Tacos

Tacos reminds us of the years we spent living in El Paso. Because the twins’ birthday falls on a busy Monday this year, I’m choosing a meal that’s ready in less than thirty minutes.

Easy Vanilla Cake Recipe - slice of vanilla cake with white frosting and sprinkles on striped paper plate.

No birthday is complete without a cake, of course, but, even if you’re not celebrating a birthday today, this cake recipe is a great go-to dessert.

German Pork Burger

The twins are our souvenir from our 6-year assignment in Germany. I’m glad I got them instead of a cuckoo clock, that’s for sure! Tonight I’m making burgers not only honor the country of their birth, but because my kids love these. I’m going to double the meat and make patties to freeze for later.

Korean Bulgogi Sous Vide

My husband spent a year of the twins’ lives living in South Korea. While he was away, I made it a point to bridge the gap between his (temporary) home and ours with meals he was eating over there. If you have a Korean supermarket in your town, head there and pick up store-bought kimchi. It will make this meal effortless.!

Salmon Salad

Fish is worked into our weekly meals around here, and salmon usually gets top-billing. Not only is it the twins’ favorite fish, it’s the healthiest one we have access to in our landlocked city. I enjoy this even more the following day when I serve it in sandwich form on toasted rye.

Greens Eggs Ham Sandwich

This dinner is not as juvenile as my kids’ favorite bedtime story. This sophisticated sandwich is the best way I know how to close out the twins’ birthday week. Gruyere the key to getting that gooey stretch when you pull apart this crisp sandwich. Make it vegetarian and leave out the ham!
