Simply Recipes 2019 Meal Plan: July Week 2

Tired of the dinner doldrums? Let this week's meal plan set you free. Start with ceviche, kung pao chicken, and vegan curry, then finish strong with pork and mango picadillo and grilled chicken nachos! Dinner never looked so good!

This month, we welcome back Marta Rivera for more of her meal plans. Marta is a trained chef, mom of twins, and wife to a newly-retired soldier!

This week’s meal plan of unique dishes will expose you to recipes that may not be on your radar, and help get you out of any mealtime ruts.

I do my best to break with routine by incorporating techniques I don’t typically use, like allowing acid to “cook” my proteins for ceviche, or introducing new dishes, like a vegetarian curry, to the family.

Plan ahead for future busy weeknights by freezing leftovers. Most recipes can be stored (frozen) for up to six months. Be sure to wrap (or bag) them properly to get the most longevity from them. If you’re looking for more meals to double and freeze, here are some of our favorites.

Ceviche with Avocado and Grilled Corn

Prep some corn over the weekend and this dish is ready in no time! As an added bonus it doesn’t require any additional cooking, which we all know will heat up your house.

Kung Pao Chicken in bowl

I guarantee that after one bite of this homestyle Chinese take out, the annoying menus in that junk drawer will get ditched! Serve this over noodles for a change of pace.

Potato Broccoli Curry

I try to incorporate at least one vegan meal a week into our diets, like this flavorful and satisfying curry. Make enough rice for both tonight and tomorrow’s dinner.

Pork Mango Picadillo

I make picadillo when I just don’t feel like being in the kitchen. It’s fast, inexpensive, and can be altered to suit my fancy. This is a unique version that is ready in less than 30 minutes.

Grilled Chicken Nachos in Foil with Sour Cream BBQ Sauce

We’re camping this weekend, and I’m crying on the inside. On the outside, though, I’m pretending to be the ultimate outdoor mom. A grill grate over our campfire will bake these nachos foil packets. Cleanup is easier that way.

Chocolate Chip and Marshmallow S'mores Cookies

I’ll also pre-bake a batch of these cookies to take along and give us a break from the same ol’ boring, campfire dessert.
