Simply Recipes 2019 Meal Plan: July Week 3

Keep cool this week with a refreshing strawberry sangria, slow cooker meals, grilling options, and quick pan-fries. Eat well and beat the heat this summer!

This month, we welcome back Marta Rivera for more of her meal plans. Marta is a trained chef, mom of twins, and wife to a newly-retired soldier!

I’m living in Central Texas … in July! It’s hot and I’m miserable. Beating the dog days of summer takes on a whole new meaning when the thermometer is kissing 120°F.

My meal selections for this week take the high summer temps into account. I’ll keep cool with slow cooker meals, grilling options, and quick pan-fries. A refreshing drink recipe is thrown in for good measure, too.

It won’t matter how long this heatwave lasts, so long as we’re cool and efficient in the kitchen!

Korean Beef Skewers

Grilling cuts down on the heat inside the house, and that charcoal flavor makes them taste better than just searing them in a pan. Use a rice cooker and store-bought kimchi to keep the temps inside to a bearable degree.

Easy Chicken Enchiladas in pan covered in red chili sauce and cheese

This is the week’s only recipe that will get the heat moving in the kitchen. Use pre-cooked chicken, rice from last night’s dinner, and store-bought pico de gallo, guacamole, and sour cream to turn these enchiladas into an even speedier meal.

Slow Cooker Chickpea Curry

This simmers away while you’re out and about. Soak your chickpeas the evening before you plan to make this recipe for the most tender beans possible. Letting the slow cooker do all of the work while I'm out of the kitchen is a beat-the-heat hack I swear by!

Bang Bang Shrimp Tacos Bonefish Recipe

These quick pan-fried tacos won’t heat your kitchen up too much, but they will excite your taste buds like nobody’s business. To reduce meal prep for tomorrow, chop extra cilantro and green onions to garnish the chicken for Friday.

Stove Top Char Siu Chicken

Skip the rice and serve this meal with vermicelli rice noodles that cook quickly. Vietnamese Daikon and Carrot Pickles are my go-to accompaniment. It’s filling and low in carbs, which, in spite of the heat, will keep us from feeling sluggish.

Sangria with Strawberries and Sparkling Wine

Serve dinner with this refreshing sangria to deliciously beat the heat on these dog days of summer.
