This week's meal plan checks all the boxes! Foil packs for a "no dishes" dinner, grilled tacos with fruit salsa, salmon poke bowls, juicy burgers, and creamy basil artichoke mac and cheese!

Most of us are in the thick of summer vacation, so my hope for you (and myself) is to at some point this season get away on a fabulous vacation.

Right now, however (pathetically enough), my vacation consists of me soaking my feet in an inflatable pool on the back porch. I’ll look on the bright side, though: at least I’ll be able to make, and enjoy, meals fit for a five-star resort. I’m even going to throw in a decadent dessert, just for good measure.

  • Grilled Fish Tacos with Strawberry Pineapple Salsa

    The strawberry-pineapple salsa pairs best with a white fish like halibut or orange roughy. Make a double-batch of salsa for an afternoon or midnight snack for later on in the week. Just make sure you pick up tortilla chips to enjoy it with.

  • Creamy Basil Artichoke Mac and Cheese

    A much lighter version of the typical mac and cheese you may be used to. With basil being abundant this time of year, picking and freezing it in bulk will pay dividends later on. The three-cheese sauce doesn’t require a roux, which means less work. As an added bonus, this recipe is freezer-friendly!

  • Foil Packs with Sausage, Corn, Zucchini and Potatoes

    Foil packs make me happy because when I make them all I think about is, “There are no after-dinner dishes for me to wash!” Be sure to pick up fully cooked sausage to use in this recipe. That will help you avoid any more prep than necessary.

    Any time I can make a meal with only one cooked component, I’m all over it like, well, like white on rice. Steaming rice is the only heat involved here. Use a sashimi-grade fish for this meal-in-a-bowl. Need it gluten-free? Use tamari instead of soy sauce. No leftovers because of the raw fish, though, so this is a one-and-done dinner.
