School is officially out for the summer for my kids and, although we home school, I’m scrambling to find meals that are easy to prepare yet filling enough to keep scavenging children out of my pantry.
Not only are these recipes appealing to children and adults alike, but they’re also simple to prepare!
I try to choose meals that are multi-purpose. If tonight’s dinner can be transformed into tomorrow’s lunch, it makes even more sense to work it into the summer break meal plan—especially because those types of meals are the most budget-friendly! More money in the budget means more funds going towards day trips and vacations.

Sesame Chicken Fingers with Spicy Orange Dipping Sauce
Elise Bauer Chicken Fingers can be transformed from “kiddie food” served with French fries to a sophisticated meal for grown-ups by serving them on a bed of greens. Shake the orange dipping sauce with two tablespoons of rice wine vinegar, and you’ll have a great dressing for your new salad.
