Simply Recipes 2019 Meal Plan: June Week 1

The recipes in this week's meal plan are simple, and you can easily repurpose them for tomorrow's lunch! We're here to help keep hungry kids from the summertime ritual of all-day snacking.

This month, we welcome back Marta Rivera for more of her meal plans. Marta is a trained chef, mom of twins, and wife to a newly-retired soldier!

School is officially out for the summer for my kids and, although we home school, I’m scrambling to find meals that are easy to prepare yet filling enough to keep scavenging children out of my pantry.

Not only are these recipes appealing to children and adults alike, but they’re also simple to prepare!

I try to choose meals that are multi-purpose. If tonight’s dinner can be transformed into tomorrow’s lunch, it makes even more sense to work it into the summer break meal plan—especially because those types of meals are the most budget-friendly! More money in the budget means more funds going towards day trips and vacations.

Sesame Chicken Fingers

Chicken Fingers can be transformed from “kiddie food” served with French fries to a sophisticated meal for grown-ups by serving them on a bed of greens. Shake the orange dipping sauce with two tablespoons of rice wine vinegar, and you’ll have a great dressing for your new salad.

Twice Baked Sweet Potatoes with Cheese

Convenient meals are a necessity during summer break. When the food is the serving vessel, like these vegetarian sweet potatoes, dinner dishes are much easier to deal with. No additional sides, or pots, are needed with this meal.

Meatloaf Bites Baked in Oven

Tonight’s dinner, served with a side of sautéed green beans and mashed potatoes, becomes tomorrow’s meatloaf sandwiches. Double the meat mixture and freeze these bites for a ready-when-you-need it meal.

Fish Sticks Recipe for Kids

Having fun with our food is a great way to get our children (and even ourselves) to try new things. Take a trip to the UK by wrapping these crisp fish sticks in newsprint and serving them with malt vinegar and “chips,” or French fries.

Buffalo Chicken Lasagna

Take the mess out of chicken wings, but keep all of the flavor, in this fusion lasagna dish. Use pre-cooked chicken and oven-ready lasagna noodles to make your end-of-workweek dinner even easier. A garden salad and heat-and-eat garlic bread complete the meal.
