Meal Plan for June Week 3

I’m looking forward to spoiling my husband this week! He’s celebrating his birthday on Wednesday, so I’m starting the week with one of his favorite meals: fajitas! They’re easy to make on a sheet pan, and because they’re low in carbs (and neither of us are “low” in much of anything), I feel better about watching him indulge.

Throughout the week, I’m sticking with the meals that appeal to his love of contrasting flavors and comfort foods. Many of these dishes will be doubled and frozen for those lazy summer days ahead.

  • Sheet Pan Chicken Fajitas with Peppers and Onions

    Lighten up your workload with this one-pan meal. Prep the toppings and tortillas in the morning to make this recipe workday friendly, then let the family pick and choose their favorite garnish.

  • Italian Meatballs

    I either make the tomato sauce ahead of time or let it simmer in the slow cooker while I’m out of the house to reduce cook time. Serve with bread as a meal on its own or over a bed of noodles. Swap the pork for turkey if you’re not a fan.

    Speaking of pork, anytime I double up on my husband’s pork intake, I earn tons of brownie points! These burgers don’t need much in the way of sides. A handful of chips and you’re a hero!

    Here's another all-in-one meal that's easy to prepare. When a dish has multiple food groups in it, I feel overly accomplished! Of course, a slice of warm, garlicky French bread is a must!

  • Buffalo Wings

    Broiling instead of frying makes these wings less messy and much easier to prepare. The quick marinade doesn’t require extensive planning, so all you’ll need to labor over is whether you’ll dip them in blue cheese or ranch.
