Simply Recipes 2019 Meal Plan: May Week 2

This week's meal plan is all about easy dinners. Dig into tuna with capers, turkey meatloaf, ginger beef stir fry, stuffed peppers, and Italian skillet chicken!

In May, front doors are thrown open, bikes get dusted off, and garden tools are rounded up. The neighbors wave to each other as seeds get tucked into rows.

I feel so grateful for the sun and want to share the abundance of the season with teachers, friends, and, of course, mothers. This week’s meals are perfect any occasion, but especially for gathering people together for a meal. With minimal prep and food that pairs easily with multiple sides, there is sure to be something for everyone.

Tuna noodle casserole is all grown up in this recipe with the addition of capers and white wine (if desired). Classically Italian, this dish is easy to double to feed a larger crowd. Pair with Baked Asparagus with Parmesan.

Meatloaf is always welcome at our house, and this rendition with shredded carrots is the perfect addition to our spring menu. Serve with Fingerling Potatoes with Herb Vinaigrette. Both the meatloaf and potatoes can be made the day before and reheated.

Stir Fry Ginger Beef

This recipe is so easy, especially if you buy pre-cut stir fry beef. It uses few ingredients, which cuts down on prep time, but don’t hesitate to add more vegetables if desired. Serve with Sichuan Style Stir-Fried Chinese Long Beans, rice, and fortune cookies for extra smiles.

Quinoa Black Bean Stuffed Bell Peppers

Incredibly satisfying for everyone at the table. Add chorizo for the meat eaters, or remove the cheese for the vegans, or make a couple of each! Serve with Mexican Fruit Cocktail and chips and salsa.
