Simply Recipes 2019 Meal Plan: November Week 2

This week's meal plan is all about comfort food! Serve up some chili mac and cheese, baked chicken, vegetarian shepherd's pie, and Italian peas and rice. Finish off the week with a satisfying bowl of Manhattan clam chowder!

With the temperature dropping a few more degrees and all of the craziness leading up to the holidays, this week feels like a good time to highlight just a few of my favorite comfort food recipes from this site. Comfort foods are some of my favorite recipes to both develop and eat as they always seem to warm my body and bring a smile to my face.

Some of the comfort foods I’ve included are classics that I’m sure you’re very familiar with (baked chicken and shepherd’s pie), whereas the others are twists on a standard (chili mac and cheese) or dishes you may not have made at home (risi e bisi and Manhattan clam chowder).

Whatever the case may be, I’m sure they’ll all bring you a sense of warmth and well-being.

Best Baked Chicken Recipe chicken on white plate with carrots and herbs

Everyone should have a good baked chicken recipe up their sleeve. This recipe even has instructions on how to make gravy to serve with it. You could consider this a test drive for Thanksgiving. Serve with some creamy mashed potatoes.

Shepherd's pie is the epitome of comfort food, and this vegetarian version is no exception. You can use leftover mashed potatoes (i.e. from the batch you served with the baked chicken) to save you a bit of time when it comes to putting this dish together.

Beef Chili Mac and Cheese

This recipe is like two of my favorite comfort foods combined. Serve with a side of green beans to get your serving of vegetables.

Risi e Bisi Italian Rice and Peas

You might not be familiar with this exact dish, but I'm sure you've heard of risotto. This is essentially a specific version of risotto with prosciutto and peas. A bowl of this is sure to warm you up.

Manhattan Clam Chowder

Nothing screams comfort quite like a big bowl of soup. A Manhattan clam chowder is tomato-based as opposed to the cream-based New England iteration. All you need to go with it is a nice hunk of bread for dipping.
