I can't believe we're more than halfway through November already! Before we know it, it'll be time to start thinking about resolutions and such. But let's not get too far ahead of ourselves. Instead, let's slow down and breathe before we go all-in with winter holidays.
Some of this week's recipes are a little luxurious to pamper yourself. Think pasta with shrimp and Parmesan lemon cream sauce or veggies and brown butter. Others will feel like you've been transported to Europe for a mini-vacation – Tuscan meatloaf and Austrian schnitzel. And then sometimes you just need potatoes with cheese when you've had one of those days. Barbecue chicken stuffed sweet potatoes will hit the spot.
Enjoy!
P.S. Thanksgiving is next week! It's a good idea to start cleaning and organizing your shopping lists now. Still planning your menu? Take a look at the Simply Recipes Thanksgiving Menu Planner!

Angel Hair Pasta with Shrimp and Parmesan Lemon Cream Sauce
Elise Bauer Pasta, shrimp, cheese, and lemon — what more could you ask for? Throw in some frozen peas and you've got your serving of vegetables too!

Tuscan Meatloaf with Mushroom Sauce
Elise Bauer This recipe is from Marcella Hazan, so it's bound to be good. And the fun thing about it is that it's cooked on the stovetop instead of in the oven. So that means your oven can be used to make roasted broccoli with Parmesan to serve on the side.

Pressure Cooker BBQ Chicken Stuffed Sweet Potatoes
Coco Morante Stuffed sweet potatoes are one of those foods that I love but always forget about for some reason. Whether you're already a fan like me or have never tried them before, this recipe is sure to win you over (again). Plus, any leftovers make for a great lunch the next day.

Pork Schnitzel
Elise Bauer For those unfamiliar with pork schnitzel, it's essentially a breaded and fried pork chop. (And who doesn't love fried pork chops?) What really sets this recipe apart is the sour cream dill sauce you make to go with it. Steam some broccoli to serve on the side.

Pasta with Spinach, Mushrooms, and Brown Butter
Sally Vargas If you've never made brown butter before, now is a good time to start. It requires a watchful eye so it doesn't burn, but it is well worth your time for the flavor it brings to this dish. Throw in some shrimp or other seafood if you want to add some animal protein.
