Simply Recipes 2019 Meal Plan: October Week 2

Ease into the work week with this flavor-filled meal plan loaded with simple-to-make recipes like Sheet Pan Ranch Pork Chops, and penne pasta with meat sauce. Then finish off the week like a pro with broiled lobster tail! That's right, go ahead and treat yourself!

This month, please welcome back Aaron Hutcherson and his meal plans! Aaron is a regular contributor here on Simply Recipes and the blogger behind The Hungry Hutch.

I just returned to the east coast from California for a wedding. Anytime I travel, I feel like I’m completely wiped and definitely don’t always want to jump back into the kitchen right away.

With that in mind, I want to ease back into cooking in the beginning of the week with some simpler recipes that are full of flavor, like sheet pan pork chops and pasta with meat sauce.

But after a couple of days stretching my cooking muscles, I’m ready to switch things up and extend myself a bit, so at the end of the week, we’re making lobster! And if you’ve never cooked lobster at home before, don’t fret. There are plenty of tips and pictures included in the recipe to help make it a success.

We start the week with takeout-style Chinese food and cap it off with a little luxury. Now that’s what I call balance.

Cashew chicken

I love Chinese takeout as much as anyone, but some of your favorite dishes are easy to make at home. Case in point: this cashew chicken recipe. Serve it with some white rice or fried rice if you want to be a little extra.

Baked Ranch Pork Chop Recipe

Whoever first thought of the sheet pan recipe deserves a Nobel Prize—they're genius! An entire meal with minimal dishes to clean afterward. The key to this recipe is the homemade ranch seasoning, which you can use to marinate the pork chops the night before for maximum flavor.

Penne Pasta with Meat Sauce

Pasta is the perfect midweek meal when you want a filling dinner that doesn't require too much effort. I'd recommend some freshly grated Parmesan cheese sprinkled on top to kick it up a notch, and maybe a side of green beans.

Vegetarian Pad Thai recipe

Pad Thai is definitely one of my favorite dishes to order when I'm out at a Thai restaurant. Here's a delicious version with tofu you can make without having to put on real pants! It’s win-win! Soak your noodles the night before so they're ready when you are.

Feeling a little fancy? Have date night in and treat yourself to a lobster dinner at home with this recipe. The lobster and brown butter sauce would go great with a simple pasta and salad on the side.
