Happy Halloween week! I may be a thirty-something adult, but I still love celebrating the holiday as much as anyone. (My version of celebrating usually involves watching Hocus Pocus at home with friends.)

If you also decide to celebrate and end up carving pumpkins, be sure to save the seeds for roasting! They make a great snack on their own or are great for sprinkling on salads.

This week we’re looking all over the globe for dinner inspiration. Live like an Italian while eating pasta e fagioli or stuffed shells while sipping a glass of Chianti. Travel down to Argentina for a steak dinner with chimichurri. Savor the Middle Eastern flavors of cardamom chicken and tabbouleh. And for something a little closer to home, enjoy classic Cajun and Creole cooking with shrimp etouffee.

Let your taste buds take a trip down to Louisiana with this classic recipe. Though this recipe includes instructions for making your own shrimp stock, store-bought stock will get this dish to the dinner table in record time. Serve over pressure cooker white rice.

This soup of pasta, veggies, and beans comes together quickly for a weeknight meal. It's great on its own, but a sliced baguette on the side for dipping is my go-to move for soups.

Chimichurri is legitimately one of my favorite sauces, and I love the avocado spin on the bright, herbaceous condiment. It's the perfect accompaniment for the skirt steak. Serve it with some green beans or baked potatoes on the side.

Stuffed shells are the perfect comfort food as the temperatures continue to drop outside. The recipe calls for mild Italian sausage, but try it with spicy sausage if you like it hot.

Cardamom is one of my absolute favorite spices. Though many people think of using it with baked goods and desserts, it works well with proteins too. I think this autumn tabbouleh would make the perfect complement.
