September, and the start of the school year, is the perfect time to set new goals.
Fine tip pens and spiral-bound planners help organize my jumble of ideas. Here are the goals I set for the new school year:
- Have both boys make their own breakfast and pack their own lunch. (Wish me luck!!)
- Cook through a cookbook with my husband.
- Make fewer trips to the grocery store.
I’m excited to get started! One way to make these goals a reality is to adjust my meal plan strategy. My younger son loves to eat leftovers, so having an extra serving that he can put in his lunch makes his job easier.

Broccoli Beef Stir Fry, Italian Grilled Cheese Sandwiches, and Fish Stew with Ginger and Tomatoes are done in thirty minutes. Tomato Galette With Parmesan Whole Wheat Crust
Sally Vargas Fresh tomatoes tucked in a cheesy crust? Count me in! A galette is pie’s rustic sister. No need to fuss with crimping or trimming a crust to fit a pie pan. Dibs on any leftovers! Serve with Grilled Romaine Lettuce.

Nick Evans Resist the urge to order a pizza and make these quick sandwiches. These are a great way to use pepperoni and salami that are lingering in the refrigerator. I love the crispy texture that results from using a cast-iron skillet. Serve with Tomato, Onion, Avocado Salad.
