Simply Recipes 2019 Meal Plan: September Week 2

Back to school is in full swing, and this week's meal plan is ready to help you make the most of it! Every dinner from Tandoori Chicken and Italian Grilled Cheese Sandwiches to Broccoli Beef Stir Fry and Fish Stew is meant to be quick and easy!

This week, please welcome Rachel Knecht and her meal plans! Rachel is a recipe tester here on Simply Recipes and the blogger behind Baking with Rachel.

September, and the start of the school year, is the perfect time to set new goals.

Fine tip pens and spiral-bound planners help organize my jumble of ideas. Here are the goals I set for the new school year:

  1. Have both boys make their own breakfast and pack their own lunch. (Wish me luck!!)
  2. Cook through a cookbook with my husband.
  3. Make fewer trips to the grocery store.

I’m excited to get started! One way to make these goals a reality is to adjust my meal plan strategy. My younger son loves to eat leftovers, so having an extra serving that he can put in his lunch makes his job easier.

Broccoli Beef Stir Fry, Italian Grilled Cheese Sandwiches, and Fish Stew with Ginger and Tomatoes are done in thirty minutes. Tomato Galette with Whole Wheat Crust

Fresh tomatoes tucked in a cheesy crust? Count me in! A galette is pie’s rustic sister. No need to fuss with crimping or trimming a crust to fit a pie pan. Dibs on any leftovers! Serve with Grilled Romaine Lettuce.

Tandoori Chicken

Bone-in chicken is marinated in a combination of spices and yogurt before hitting the grill (or broiler) for a flavorful meal. Leftovers would be great shredded and served warm or cold in a salad or wrap. Serve with Indian Style Rice and Naan.

Stir-fries are one of the fastest ways to get a fresh, warm meal on the table. Thin slices of beef cook along with broccoli and garlic for a meal that is done in thirty minutes. Serve over rice.

Grilled Cheese Sandwich

Resist the urge to order a pizza and make these quick sandwiches. These are a great way to use pepperoni and salami that are lingering in the refrigerator. I love the crispy texture that results from using a cast-iron skillet. Serve with Tomato, Onion, Avocado Salad.

Fish Stew with Ginger and Tomatoes

This simple stew is exactly what I’m looking for on a crisp September evening. The tomatoes, potatoes, fish, and spices all come together in about thirty minutes. Serve with crusty bread.
