How is it already October?!?! I’m still trying to get into the fall groove with our school and work schedules. These days, I just want to enjoy the chilly temps, daydreaming about pumpkin spiced something-or-other, and Oktoberfest (which I celebrate all season long!).

Great produce is still coming into season in October. Keep an eye out in your food markets for corn, broccoli, cabbage, and kale this month!

Vegetarian Stacked Enchiladas

I’m taking full advantage of the great corn that’s still available here in Texas. These Texas Stacked Enchiladas with Corn and Black Beans are not a only great way to incorporate the vegetable into your meals, it’s a quick way to do so, as well. This vegetarian meal doesn’t skimp on flavor which makes it a huge hit in our meat-loving home.

I’m partial to anything I can cook “hands off” and this Slow Cooker Beef Stroganoff allows you to come home to a dinner that’s virtually finished. Just add the noodles to the slow cooker fifteen minutes before you’re ready to eat, and dinner’s done.

Stuffed Pork Chops with Kielbasa and Sauerkraut

The color-changing leaves always takes me back to the time we spent living in Germany. Oktoberfest was a magical time of festivities, laughter, and copious amounts of beer. Although Oktoberfest is traditionally celebrated in September, I like to celebrate throughout fall. Stuffed Pork Chops with Sauerkraut and Kielbasa is a great way to enjoy the flavors of Germany.

Marinate this chicken overnight in your favorite sauce and then bake it for dinner. It's ready in less than an hour, and for me, that makes it ideal for my midweek dinner. I love serving it with German Potato Salad -- a nod to my twins’ birthplace.

What’s better than spooning up a rich, hearty mushroom barley soup

on a chilly Autumn day? You’d be hard-pressed to find anything more comforting than a bowlful of this soup. Serve it to your loved ones and a find great movie to close out the week.
