Simply Recipes Meal Plan: November 2018, Week 1

Here's your meal plan for the first week of November! We've got Shrimp Scampi, Mushroom Risotto, Steak Diane, and more!

With Halloween behind us and Daylight Saving this weekend, we’re heading full steam ahead toward the end of the year. Ah! I’m not ready yet!

My mom always claims that this is the week when she’ll start cleaning the house to get it ready for guests to come over for the holidays, but in reality, that doesn’t wrap up until the day before Thanksgiving. (Speaking of which, I hope you’ve made your travel plans already if you’re heading out of town!)

Last weekend, I was in Florida for a college friend’s wedding. This was my second and final wedding for the year, which is a big improvement from the year I had five, two of which were on the same weekend. (Yes, they were on separate days, but no, they were not in the same city.)

For this most recent occasion, a large group of us rented a house together where we were able to reconnect, celebrate the happy couple’s nuptials, and lounge by the pool. It was a great break for my usual fall routine and allowed me to get in a little extra sun before it gets to be dark both when I wake and when I get home from work.

Now I’m back in New York and back to my regular routine. Here’s what my meal plan looks like for the week ahead!

Shrimp Scampi

I love buttery, garlicky shrimp scampi, and it's easier to make at home that I initially thought. Toss it with some long pasta, such as angel hair or linguine, and you've got yourself a delicious meal. Want something on the side? How about some steamed broccoli?

Sesame-Crusted Pork Cutlets with Crispy Shallots

It's hard to say no to a crispy pork chop. Plus this recipe has a flavorful dressing made with ingredients like miso, ginger, and sesame oil. The spinach and fried shallots make it feel like a hearty meal, and you can take the leftovers to work for lunch.

Mushroom Risotto

Yes, you can make great risotto at home! However, this dish is not for the easily distracted as it requires a bit of babysitting -- but it's definitely worth the effort. Serve with a bright salad to balance the richness.

Steak Diane

This recipe is for all my fellow fire-lovers! The classic sauce to accompany your steak requires you flambé the cognac, so be sure to have your oven vent on and a fire extinguisher nearby (just in case!). Serve with some sautéed spinach.
