Meal Plan for October Wk 2

This month, we welcome back Marta Rivera for more of her meal plans. Marta is a trained chef, mom of twins, and Army wife – and she is also one of our Simply Recipes contributors and recipe testers!

Hearty meals don’t always mean heavy, labor-intensive meals. Thankfully, the meals I’ve chosen for this week are all schedule-friendly, as well as rich in flavor. Switching up techniques and taste profiles ensures my family never falls into a food rut.

In less time than it would take to order and carry it out from your local Chinese takeout spot, this Easy Vegetable Stir Fried Rice is ready to eat. It’s not only a speedy dinner option, it’s filling, healthy, and meatless for your Monday.

I like taste-testing my recipes...especially when they include vodka. Shrimp Pasta a la Vodka

is one of those surprisingly hearty meals that is simple to make. Buying your shrimp peeled and deveined makes light work of this rich dish. Add a classic Caesar Salad on the side for a complete meal.

  • Mushroom Toast with Fried Egg

Eggs-for-dinner is a budget-friendly way to fill up mid-week. This Mushroom Toast with Fried Egg is more sophisticated than it’s given credit for. I use challah or a rich brioche to make this even meal more elegant.

  • Paleo Chicken Adobo

Paleo Chicken Adobo over rice gives my family a change of pace towards the end of the week, flavor-wise. I enjoy introducing our taste buds to cuisines from all around the world, and this filling, vinegary, gluten-free Filipino dish is a flavorful way to do that.

  • Carbonnade Beef and Beer Stew

This dish is the epitome of rich meals! Carbonnade Beef and Beer Stew involves a substantial amount of braising time, so I put it on to simmer right after we walk in the door from our extracurricular activities in the afternoon. By the time homework is done, and everyone’s home from work, we’re ready to tuck in. (You can also make it ahead of time and reheat it for Friday's meal.)
