The Most Popular Recipes in April

Want to know what the most well-loved recipes for the month of April were? You know the ones: the recipes our Simply sous chefs (that’s you!) have been cooking, sharing, and talking about nonstop. Read on to see what made the cut!

Getting back to basics seemed to be the theme of our most popular recipes this past month, and it’s not hard to see why.

We’re having to stretch our food a little further and to get creative in the pantry to round out a full meal. We’re making things we used to buy, getting creative with our baked potatoes, and putting carrots in our pancakes.

What other recipes got our readers through another month of social distancing? Let’s see!

Homemade flour tortillas on a platter.

Simple ingredients, ready to go in under an hour, and no special equipment needed. It's not hard to see why we all love this recipe so much.

Cheesy, broccoli, bacon loaded baked potato on a white plate with a salad of spinach and tomato behind it on a white plate. The potato is sliced down each side and the top and bottom. Chopped bacon, broccoli, scallions and shredded cheddar cheese are on the potato. A spoonful of sour cream is in the middle of the potato. A fork is to the right of the plate.

Load those baked potatoes up in style! These spuds come fully equipped with steamed broccoli, bacon, cheddar, sour cream, and chives. No need for an entree as they are fully capable of filling you up on their own.

Tall stack of buttermilk carrot cake pancakes with a cream cheese topping, chopped pecans and a puddle of syrup at the bottom of the plate. Whole carrots, a glass of cream cheese topping, more pancakes and a bowl of chopped pecans surround the plate.

When we think of carrot cake, we naturally think of it in the form of a layered cake or cupcakes, but why not pancakes? Top a fluffy stack of pancakes with a dollop of our special cream cheese frosting and you won't be able to tell if it's breakfast or dessert.

Vegetarian soup with pesto in a white bowl with a gold spoon to the right and a second bowl in partial view in the upper right. Sliced carrots, chopped asparagus, tortillini and peas are in the broth with a dollop of pesto in the center.

This healthy soup is the very definition of nutritious and delicious. It's loaded with the goodness of spring vegetables (use fresh or frozen!) and gets a little zip from pesto. The best part about this recipe is it can be customized to include whatever veggies or tortellini you'd like.

Two small bowls of marshmallow salad with cherries on top are at the front of the image. Two spoons are crossed to the right of the first bowl. A striped dish towel is in the background.

We can't help but feel nostalgic with every bite of this light and fluffy salad, and we know you will be too. There are endless variations of this salad, but this is the one that pulls out all the stops. We're talking canned fruit, whipped cream, maraschino cherries, and even colored marshmallows!
