Use It Up! A Mini Meal Plan for Steak Lovers

Hate eating the same ol’ same ol’ every day? Try out this mini meal plan featuring steak, a hearty dinner salad, and pizza! They use up all the leftovers without feeling like dinner’s on repeat.

I’m the primary cook in our house (occupational hazard), and although I love to cook, I also have other things I enjoy doing, which means maximizing my time in the kitchen is priority number one.

Meal planning saves time, and time is a premium for most of us. Repurposing Monday night’s leftovers or ingredients—so I don’t feel like it’s just dinner on repeat—makes everyone in the house happy. I’m not making a new meal start to finish, and the kids aren’t complaining about leftovers, again!

Meal planning, even if it’s just a few dinner ideas per week, saves me time on prep, dishes, and clean up. I’m a big fan of extra time; I know we can all use more of it.

    I love flank steak. It cooks quickly, slices thin, and is the perfect steak for leftovers! Make the marinade, and let it soak for two hours or overnight. Grill it and eat alongside Marsala Glazed Mushrooms.

    Just assemble the vegetables, and dress the greens. Top it with last night’s leftover grilled steak, and dinner is done!

    Replace the sliced red onions with leftover scallions from last night’s salad, and use that remaining red pepper half! If you have any mushrooms left over from Monday, toss those on there too. Pizza is the perfect way to use up what needs to be finished!
