This Week’s Meal Plan: 5 Recipes to Get Your Green On!

Celebrate spring and St. Patrick’s Day with “green” food all week long. Start your meal planning week with Thai Green Curry, by midweek enjoy a quick and easy Kale and Sausage Dinner then wrap up the week with Salmon with Avocado Remoulade!

It’s finally here! Spring Equinox and St. Patrick’s Day arrive all in the same week. I don’t know about you but green beer and the arrival of Spring are bright spots in what has been a stressful couple of weeks.

The Coronavirus and social distancing measures may have changed the way we celebrate this year but that doesn’t mean we can’t have fun.

I’m going to make the most of the arrival of green grass, leaves on the trees and St. Patrick’s Day by eating green all week long even if it’s just for my family of four.

St. Patrick’s Day has me thinking about the color green and all the different ways it shows up on our plates. Fresh herbs, spices and a plethora of vegetables add a lovely hue to a broad spectrum of dishes. All the healthy stuff is great, but I feel like a little dessert is in order too. I’ll definitely be noshing on some Grasshopper Pie.

This week’s recipes explore all different types of emerald dinner ideas, such as Thai Green Curry with Chicken and Green Chile Mac and Cheese while Kale with Sausage and White Beans brings the dark leafy greens to the table. I love the unconventional use of avocado and zucchini in Pan-Seared Salmon with Avocado Remoulade and Turkey Zucchini Burger with Garlic Mayo.

I’m always up for a heaping plate of Corned Beef and Cabbage but thought this year I’d extend the St. Patrick’s Day fun to the whole week! Let’s take this opportunity and explore all different ways to incorporate various shades of green to our meals.

I’m excited to bring all these flavors (and hues!) to our table and I hope you enjoy them as well.

Bring the color green to the table with this delectable green curry. Coconut milk, chicken thighs, and vegetables meld to create a satisfying dish. Serve over rice.

Green Chile Mac Cheese

A vegetarian, Southwestern take on mac and cheese everyone will love. Feel free to use either fresh or canned chilies for this recipe. The slight heat wakes up the palate between gooey bites of pasta for a welcome change. If you can’t imagine St. Patrick’s Day without corned beef, then try this Slow Cooker Corned Beef and Cabbage. Turkey Zucchini Burger with Garlic Mayo

Burgers don’t have to wait until summertime. These turkey burgers are great cooked low and slow on the stovetop. Zucchini is shredded and mixed with ground turkey to create a scrumptious dinner. Serve with Crispy Air Fryer French Fries.
