What’s for Dinner? 5 Recipes the Whole Family Will Love

Dinner this week has something for everyone – chili, easy enchiladas, and ramen stir fry for the causal diners and Chicken Cordon Bleu or seared tuna for those looking to serve something extra special.

This week, please welcome Rachel Knecht and her meal plans! Rachel is a recipe tester here on Simply Recipes and the blogger behind Baking with Rachel.

Valentine’s Day is one of my absolute favorite holidays. It’s hard not to get carried away. Make cookies! Handmade Valentines! Plan a special date! This year with busy schedules all around I decided to keep it simple. Instead of doing more, I’m going to be extra intentional with the tasks I already do. The recipes I picked this week help me express the love I feel for my family.

Slow Cooker Shredded Chicken Chili is my perfect dinner. Having a steaming bowl of chili waiting for me when I get home is totally my love language. I’ll make Beef and Broccoli Ramen Stir Fry for my oldest. He adores stir fry and beef.

Our whole family likes Chicken Cordon Bleu. The combination of boneless chicken, cheese and prosciutto is a classic that deserves a seat at the table. The best part is, I can prep it over the weekend, freeze it, and have ready when I am.

Easy Enchiladas are for my sweet husband. We spent many date nights talking over cheese enchiladas. Finally, Friday brings about Seared Tuna with Avocado for my youngest. He shares my love of sushi and is always excited when seafood is on the menu.

I hope you enjoy this special week and that these meals add to the love around your table as it will mine. With a little luck, I’ll still have time to make a batch of cookies for dessert.

One last thing: We wanted to highlight the ultimate way to save time in your week: having your groceries delivered right to your door. Click on the red “Add to Shopping List” button at the bottom of any recipe (or meal plan) and check it out! We call this feature “Relish” and we’re into it because, really, dinner can be simpler.

Easy Slow Cooker Shredded Chili Chicken Chili in the crockpot

Put a new spin on red chili by swapping out the beef for boneless, skinless chicken thighs. After simmering in the slow cooker, the tender chicken is shredded and ready to be ladled into bowls for every hungry member of the family

Beef and Broccoli with Ramen Noodles

Instant ramen noodles (or slurpy noodles as they are called in our house) is a lunch favorite. Finding a delicious dinner use for this pantry staple gives me one more reason to stock up. The ginger-y sauce elevates these noodles to dinner fare, while still cooking in a snap.

Homemade Chicken Cordon Bleu on a white platter with lemon wedges.

A classically decadent meal for the loves in your life. Chicken breast is flattened and wrapped around prosciutto and stuffed with gruyere (or swiss) cheese then topped with crunchy breadcrumbs. Not only will everyone love this dish, but it can be prepped and frozen beforehand.

Cheese Enchiladas

I have a soft spot for cheesy red enchiladas and this easy vegetarian dish is just what I need when the craving strikes. Lightly fried yellow corn tortillas filled with shredded cheese and topped with a quick red enchilada sauce. The casserole bakes in the oven for a mere 15 (!!!) minutes. Serve with Instant Pot Refried Beans.
