I didn’t have chocolate powder so I used coffee powder from a coffe machine I had and it actually turned out amazing!
This recipe is amazing and works for me everytime. It’s simple, uncomplicated and delicious.
It bored after a while but it was okay. I added some chocolate chips which worked fine.

It’s not the best, but it’s still good. Great for cooking at 3am when everybody else is asleep….. I subbed oil for butter and water for milk. I also added peanut butter and caramel sauce and mixed it in before I cooked it.
I loved it I used just a couple teaspoons less of sugar and only 1.5 tablespoon of oil worked great!
Just made this in a bowl and doubled it! Checked the inside of the microwave to check wattage (1000), set the cook time to 1min, 30 sec. microwaved for an additional 30 sec and it was perfect!
I couldn’t find my cocoa powder so I had to use 2 tablespoons of chocolate chips. I wonder who had my cocoa powder away……Anyway, the cake tasted a little bit too sweet but still nice. I used groundnut oil and couldn’t taste it. Definitely a good late night pudding when you have cakey pangs :)
First mug brownie/cake I havnt had to add extra liquid to. I highly suggest sticking to the recommend oils though. I used coconut oil as it was all I had and I can definitely taste it. Not the worst thing in the world but not a flavour I was craving. I also used hot chocolate powder and it worked really well. Ended up finding my coco powder after but oh well haha. Definitely gonna be a frequent treat ☺️

Wanted to see what all the fuss was about, and I hate to join in on the negativity but I had the same issue. Followed instructions exactly. The taste and texture were nowhere near “brownie”, just oil. Sorely disappointed.
Pretty good. Definitely more of a cake than a brownie. Tried to add choc chips but that leaves very runny sections so I would not reccomend this. Nice flavor, light, moist.

Hi Bob, it rises some, but only because the microwave works by boiling the water in the mixture, and the boiling water produces air bubbles.
Very impressed. I used 1/4 cups of coffee to see what it would be like ( I usually add coffee in place of water when called for in brownies or certain chocolate cake recipes. IF you follow this recipe exactly as write, it will NOT fail you. Totally bomb!
I experimented with different times and this is more of a chocolate cake than a brownie. Regardless, it’s not bad considering what it is.
I reduced the oil to 1 tsb and kept the rest the same. Was very rich and brownie like. Shared with my daughter. Was jut enough! May add chocolate chips next time. Also like the espresso powder idea. Thanks!
Y’know, this is actually pretty good all things considered. Of course it’s not actually gonna taste like a traditional brownie since its one portion thrown together in minutes then microwaved in a standard mug. But it does help a “baked chocolate” fix!
I added a bit of espresso powder and did the heavy cream on top suggestion. I liked it and would make again. Go bake real brownies if you’re looking for actual brownies. I just wanted some fast chocolate.
My go to when I don’t want extra brownies sitting around, plus almost instant satisfaction; microwaves a bittersweet relationship we do have :)
As far as mug cakes go they don’t get much better than this.
If you’re changing the recipe at all understand you might get a different consistency.
IF you expect this to take exactly like a brownie, with the same exactly consistency, I’d suggest just baking brownies.
This recipe was extremely dry even despite the fact that I had to use 1/2 cup of water instead of 1/4 to make the batter stirrable. Ratios are off and I wouldn’t try it again
First time I’ve tried this. It was DELICIOUS – and my husband agrees. I did change a few things: I used butter instead of oil; I substituted Nomu Skinny Hot Chocolate as I had no cocoa; I added coffee to the water which I heated, and I microwaved two mugs together for 2 mins 20 secs. I let it stand for 10 minutes to complete the cooking process. There was a lovely gooey chocolatey sauce on the top, and the rest was like a perfect brownie. Thank you for a delicious sweet treat
How did this get a 4.5 star review on google? Not trying to be rude, but this recipe was as good as I had hoped (and yes, before anyone asks, I followed the recipe exactly). Very disappointed.
Needed a chocolate fix tonight. Did a search and picked this one at random. Made it per instructions okay probably should have read the reviews little on the raw side should have cooked a 15 seconds longer. I personally like desserts not overly sweet so the taste was okay.
Hi David, every microwave is different, you have to make adjustments for your particular microwave. The best thing about undercooking with a microwave is that you can easily put the mug back in for a few seconds to cook it further!
I followed this recipe to the T and it tasted pretty bad. It was very thick in a horrible way and had barley any flavor. Did not taste like anything edible.
Great Recipe! I replaced the 2 tbsp of oil with 2 tbsp of melted butter and absolutely loved it! Thank you for sharing such an amazing recipe
Pretty good, not great. The brownie needs to more chocolatey and sweet. Also it’s a little mushy towards the bottom. Hoping for a new and improved recipe!
I tried this tonight and I don’t think I’ll be trying it again. It was thick and rubbery and didn’t taste like chocolate even though I added a little more cocoa powder. It also needs more sugar like several of the other reviewers mentioned. Good idea, just needs a little tweaking.
I have made this recipe 2 or 3 times now and I love it! The heavy cream on top makes it perfect. Will definitely be making it again!

Awesome. I made it with carob powder as I am supposed to avoid chocolate. I added 1 tbsp of ground flax to address the lack of structure. I topped it with carob chips when it came out of the microwave.
I am so happy I found this recipe!! I used skim milk instead of water and I ommited the cinnamon. Chocolate chips were also a great addition. I’ve tried three other brownie in a mug recipes and this is by far my favorite! Thank you!!
Not what I was expecting… next time will not add cinnamon. Makes the taste weird. Might try again if I’m really needing a chocolate fix.. without cinnamon.

I am very confused. I did it for 1 minute and 40 seconds and it was still very soft and raw. i don’t want to heat it up again because I am afraid I will do something to it. What if I do it for 2 minutes? Will it still be good?

Made this tonight and honestly the BEST Brownie in a Mug recipe I’ve ever had. Super moist, fluffy, and chocolatey. I microwaved it for a minute and 30 seconds and it was perfect. The only modification I made is one fourth teaspoon of vanilla instead of an eighth. Will DEFINITELY make again.
May this tonight and it was delicious. I used almond extract instead of vanilla. I also adjusted the time and cooked it a little less than suggested.
Not great, bland tasting, could have done with some more sugar. Also my microwave isn’t as strong as the microwave in the recipe but after 75 seconds, it was over cooked

Texture was slimey and rubbery. I don’t think I missed any steps, but the taste made me spit it out. I hated it, didn’t cure my cravings at all and just left me with a bad taste in my mouth.

It was ok. I thought the texture was rubbery. Taste was ok. I didn’t love it, but I didn’t hate it. I made it because I was craving something sweet. Yikes just under 600 calories. Next time I will spend my calories on something baked in an oven or from a bakery. I am not a big fan of most mug recipes, but I keep thinking maybe I will come up with a really great recipe.
It needs a levening…next time I will put in and egg or baking powder. Also it is really dry…maybe a few chocolate chips will moisten it up a bit.

An average-tasting brownie, at best. My 12-year old and I made this tonight, and neither of us were impressed. The flavor was on the bland side; the texture and body similar to a cupcake. Quick and easy for a fast chocolate-fix, but we will continue our quest of a great lil’ Brownie in a Mug.

I made it by myself but theres tiny little white spots in it. not sure if its flour of salt. I used malt powder instead of cocoa powder.
Hi Brandon, be sure to mix the dry ingredients really well before adding the wet ingredients, and then mix again really well after adding the wet ingredients. No idea if malt powder makes a difference here, I haven’t tried using it.

Awesome for a fast easy dessert. This is one of the best recipes. I have ever found for a quick microwave brownie. The rich chocolate and the thick texture of the brownie. Amazes me that it wasn’t cooked in oven by a professional.
For 700 watt microwaves I used a full power settings. And only cooked it for slightly more than 2 minutes.
Can I cut the sugar in half if I prefer a “dark chocolate” brownie instead?

Is this plain flour or self-rising flour? Looks like It would have to be self-rising. I see where one lady DID add a bit of baking powder.
No, it is plain flour. The microwave causes the liquid in the mixture to boil and bubble, creating its own leavening. You don’t need to add baking powder.
I added oats to it and it’s like a mix of the choclate-oat cookie and brownie, and I didn’t cook it all the way. Amazing!!! I’ve used this recipe many many times.
Well, I love brownies. I enjoy using my microwave. I enjoy doing fast and simple. I hate to be a Debbie Downer, but I checked out the calories and it’s 579 calories! I believe I would share this recipe with another person, that’s still almost 300 calories for a half serving. I’ve never had very good luck using Splenda in baked products. But, then, it’s brownies, made quickly, in a mug to satisfy a brownie craving.
We aren’t looking for calorie counts, we want a quick chocolate fix lol

I’ve made this 3x this week it’s so good. I left out the cinnamon and added instant coffee granules. I love gooey/fudgy brownies and this was is it.
I live in Texas and try not to turn the oven on any more than I have to. I experimented with this recipe last night added mini marshmallows …awesome indeed. Well today I am picking up grand kids from school so I thought I’d make it bigger, and it worked beautifully tripled the recipe , used a glass square pan and had to mess around with cooking time, but in less than 5 minutes total we had brownies hot with a dollop of whipping cream. It took longer to put together than it did to cook. Wonderfully fun recipe. I will work next teach the kids to make their own with supervision of course . Thanks,

7 months pregnant in July – wanted brownies :) no 8*8 pan and my bigger one was holding leftovers. The brownie thirst was STRONG!! Happened to stumble upon this recipe and threw it together. I used coconut oil though. Threw some sliced almonds and flaked coconut in it….AMAZING and perfect!! AND (my favorite) no leftovers to munch on or for bigger kids (or hubby) to steal

I have made this twice and I liked it both times, but my friend liked it the first time and not the second so I am trying to see what I may have done differently. What would happen if I add a little too much oil? a little too much chocolate? a little too much flour? a little too much vanilla? a little too much or too little water? it was mushy in one of the two mugs. Hi Sydney, any number of things could affect the outcome of the brownie. It’s a little too mushy, just put it back in the microwave for another 10 to 15 seconds.
I made these with my granddaughter tonight for the family and they loved it! We added touches to each one to match their tastes ( peanut butter, instant coffee, m & m’s etc). Fun thing to do with your little helpers.

This recipe was perfect it tasted so moist and the chocolate wasn’t overpowering it was really good I did add some chocolate chips to it though mixed them in and then before I threw it in the microwave I sprinkled some on top it took me 3 minutes but I have an old microwave so that might be why definitely will recommend this recipe to someone else amazing!
This mug brownie didn’t turn out great. The flavor was very bland. I expected way better things from this recipe.

I’ve tried many mug brownie recipes but this one by far works the best. Instead of vanilla extract I used almond extract and it tasted great enjoying it with a glass of milk right now

Yumm…I just finished scraping my bowl. So…I followed the recipe exactly but made 3 substitutions:
I used soy flour
I used splenda sugar blend ( only needed 2 tbsp to be equivalent to 1/4 sugar)
I used soy milk (instead of the water)
I microwaved it for 1 minute & 10 seconds and it was PERFECT.
I’m thinking next time to use half protein powder and half soy flour. I’m trying to make it as low carb as possible.
I mad it exactly the way the recipe called for, and it turned out amazing!! I put two scoops of ice cream on top too and it just added to the creamy texture of the brownie!! So thankful for the recipe
Scrumptious to distraction… albeit with a few modifications:
– used spelt flour,
– replaced cocoa with cacao,
– substituted water with milk,
– replaced recipe’s oil w/coconut oil,
– replaced sugar with seville orange syrup; next time will try maple syrup,
– added 1/2 egg (reconstituted from powder)
My post-prandial delight was never this good.

Followed recipe exactly…1m 20s in microwave. It was gummy in texture, and kinda bland. Not worth the time or calories.
This little mug cake is big on flavor! Came. Out. Perfect. Made few changes…used a wee bit of peppermint flavoring, used better batter gluten free flour, so i knew i could use extra liquid so…used one large grade AA egg, used coconut oil (not melted), and added 1/4 tsp baking powder. The rest was the same, the measurements were the same, this was cake! Thank you for posting this awesome dessert!
Followed the recipe as instructed and it turned out pretty good. Loved it! For late night cravings, this recipe will come handy.

This recipe was easy and delicious. You need to top the brownie with ice cream or whipped cream because it is very chocolaty. It was smooth and I liked that it required no special ingredients.
I have made this a few times now and absolutely love it and it’s easy to make diet friendly for a diabetic. My only thing is there are 2 different measurements for the water. One says 3 tablespoons the other days 1/4 cup. I have found that 3 1/2 tablespoons works just fine. Used melted butter for the old gonna try to use coconut oil next time I make it.

I tried to make this recipe multiple times and it never really came out as well as it looks.
This literally took 5 minutes to make and was deliciously chocolately – a quick treat that is even better with a drizzle of orange or loganberry liquor and a shot of whip cream. I used an orange infused Olive Oil for half the canola. Cooked in the micro for exactly 1 min. Plan to mix the dry ingredients in a bag with the recipe to send in the next care package for my college kids – perfect late night study treat. thanks for sharing!
i didn’t add any cinnamon, and sprinkled in some chocolate chips. it was delicious and if i were to have one criticism it’d be that the canola oil threw off the taste a little, so next time i might use unsalted butter instead.
Hi Stella, if your canola oil is throwing off the taste it’s time to ditch that canola oil. Canola oil should be tasteless. Canola oil does go rancid pretty easily though, so if that is what you are tasting, it should be thrown away. Butter is a good option in any case!
Not very sweet but definitely hit the spot for something quick and with little clean up. I used sweetened cocoa and cut down on the sugar just a tad. Next time I’ll use a little more sugar than what it calls for and still use sweetened cocoa. I had mint chocolate chip ice cream but vanilla would have been even better. I say it’s a keeper!
Don’t Give Up!!
Firstly, I have tried many of these recipes and have found that they all start to burn before 60 seconds is up with my microwave. I would highly suggest starting at 40 seconds to begin with. After many trials I have found that melting the fat with the sugar beforehand yeilds the best tasting results. Using butter or coconut oil is going to taste best, as vegetable oil contributes nothing flavor-wise toward this simple recipe’s construction. Once the butter and sugar have combined I add the water and the cocoa, then lastly the flour and flavorings. I have learned to watch this nuked treat very carefully using my nose rather than my eyes. The cake/brownies will continue to cook once removed and while it is cooling it is also drying out. To be sure that your method produces a nice, moist treat do some testing and don’t give up. It is very worthwhile once you have figured out how to best use your microwave for this super quick chocolate fix. My first few were terrible but I stuck with it, gave it a few tweaks, and now I am a pro at quick brownies and cakes any time. There are no hard rules to this method either. If you find it is constantly too dry, up the fat or the liquid. Milk can also be used. In addition to the cocoa powder you can add chocolate or other flavored chips. Pouring over a dollop of heavy cream is great for cutting the sweetness and adding a wonderful creamy flavor to the chocolate. Just be sure that your container is big enough to accommodate the batter and the options are endless. I even added an egg yolk to one trial and it came out very rick and delicious! This is my go-to recipe for a brownie in a mug. It’s really yummy and quick to make. I follow the recipe exactly. No, it doesn’t taste as good as pan brownies….but let’s get real, if we had the time an inclination to make pan brownies, we wouldn’t be looking for how to make it in a cup. It’s chocolate and it’s quick. Mine is warm, moist, and yummy, and it doesn’t require a trip to the store. Thank you for sharing this recipe!
Mine turned out very bland and not very good tasting. i added some frosting and chocolate which made it better but it overall wasn’t that great. wish i had read the comments before attempting. Would not make again

Pretty good, but it was a little too thick to be a brownie (someone suggested adding baking powder to make it fluffier, so I’ll try that next time!). My main problem is that it was a little bland. I wanted it to be sweeter or more chocolatey, so I have a question: what kind of sugar should I use? I tried half brown and half white. Will one of them make the brownie sweeter? If not, I think I might add a little more sugar next time. (I also didn’t have any ice cream, and I’m guessing it normally makes up for the lack of sweetness). I really like that this recipe doesn’t have eggs though – it’s a little easier to make and I don’t have to worry if I try some of the batter before it’s cooked:)
Brown suger is sweeter than normal white sugar so if it was not very sweet do half white and half brown sugar, baking powder does make it fluffier and bigger so you can try that… my brownie was fluffy but bland i sugest adding chcolate chips into it for more of a chcolatey flavour, Hope this helped! (btw for the oil i used coconut oil)
Started to make this and realized I didn’t have any sugar, so I substituted 1/4 cup of hot cocoa with marshmallows and skipped adding more cocoa. After it was done I topped it with caramel syrup (as I had no ice cream or whipped cream either) and it was actually really good.
This turned into a catostrophic mess. It ended up spilling over and all over the mug. It did turn out delicious but I’m glad I put a plate under it.

Delicious! Ended up cooking for 2 minutes as my microwave is an 800 watt. Used some leftover vanilla from a vanilla bean, instant coffee, and stevia to make it “diet friendly” (if you like me were browsing the comments to see how much stevia you should add, 1/4th of a cup of stevia and a tablespoon more should make it sufficiently sweet). Or at least as diet friendly as a brownie could be. I had such a strong craving for something warm and chocolaty and this hit the spot.
I read the comments while devouring my first attempt at this. Contrary to some of the reported results, this came out perfectly for me. (I made it exactly as written.) It’s probably a dangerous recipe for me to have on hand for these gray, chilly days when I tend to crave something warm and sweet!
Is there any way to make it more of a moist, fudge, sweet brownie? It came out kind of dry and almost… dull. It wasn’t very sweet, and I didn’t get much of a chocolaty brownie feel… I may add some chocolate syrup or something of that sort, but the brownie itself was… disappointing. I was hoping to sink my teeth into a chocolaty brownie but it kind of tasted… Earthy? It was just off and kind of odd.
This recipe turned out well for me are usually compilation of butter in oil and it was the perfect little brownie treat.
I have tried many different mug cookie/brownie/cake recipes with little to no success, but as I’m bored on my day off I decided to try this one. This is it. I was really nervous about over cooking it, or potential ‘exploding’ but mine came out quite delicious and fudgy at 1:10. First of all, I have a 1000 watt microwave and followed the directions word for word, and it turned out tasting like dirt. It was powder-y and wasnt very good. I’ve tried tons of recipes for mug brownies and this was by far the worst one I’ve ever made. Secondly, I gave it another chance and added a little more baking powder. Again, not very good. Really should have looked through comments before making this. And no offense, but the comment policy is messed up. Be real, accept negative things-to a point- yeah mean and overly offensive comments aren’t cool, but really? Negativity is part of sharing anything ever.
I was craving a brownie but didn’t want to go through the effort of making an entire pan. This really hit the spot. The texture is a little more cakey than a dense brownie, but it was still excellent.

This is a great recipe! I do modify it a bit – I cut the recipe in half (because otherwise it is a little too much for me!). And to mine I added about 1/8 tsp of baking powder to get it to rise a little and become a little fluffier (more cake-like). 50 seconds in my microwave was perfect for timing!

Wish I would’ve read the comments before making 2 batches of this but it was nasty. I used coconut oil instead of vegetable but I really don’t think that’d make such a huge difference, it just did not taste like a brownie AT ALL and made my mouth sad. Ended up throwing it out and now I gotta scrub it out of my mugs.
I’ve tried a different recipe before and I thought I’d give it another try, and that’s exactly what happened to mine Devon. Maybe other people liked it but it’s not my thing. It just didn’t taste.
I don’t know what to call this but brownie or lava cake is not even close to what came out as a result. It was like chocolate sand smooshed together. I followed the recipe. I’ve made cookie in a mug before and that was good, so I looked up to do a brownie. I don’t know what happened here but this was really gross.
I dont know what happened, but I followed this recipe to a T – a TEE – but it never solidified. This nightmare was not the “lava cake” that people are commenting about but instead a volcano in my microwave. Do not recommend this recipe!!
I made this mug cake as written before and loved it! I had a craving for it tonight so I mixed it up… then realized my microwave was broke. I added 1/4 tsp of baking powder and filled three cupcake liners with the batter. Baked it at 350F for 14 minutes and they were so good!! I also subbed coconut oil as someone else had suggested. I would make them in the oven again if ever in a pinch!
It tasted decent and I would make it again. However, I must have did something wrong because it didn’t taste like a brownie.
I just made this in my giant mug. Followed the recipe verbatim and it was so good! Like lava cake. I cooked mine for 1 min 30 seconds. So moist!
I followed the instructions word-by-word and this exploded in my microwave. Just be careful that you don’t blow up your microwave……….. No, never using this recipe again. Sorry
The same thing almost happened to me. To keep it from exploding, watch it and stop the microwave whenever it starts to rise and wait for it to fall again. Do this until it’s done cooking.
I made it as instructed but added a big spoonful of peanut butter and cooked it for 1 minute and 40 seconds and it’s amazing!!! It’s still fluffy and moist with a molten peanut butter middle so good
I usually put a little more liquid in it to make it fluffier and if you slightliy undercook it, it will give you a very decent lava cake.
Switching the water for an espresso shot makes it even tastier!
Also instead of ice cream, make a lemon topping with some mascarpone whipped with sugar to the taste, the zest of one lemon and the juice of half a lemon until you get a whipped cream texture!
This was really quick and easy. I added some instant coffee and peppermint pieces, yum!

WOW! I made this and added some diced caramel candy pieces, and topped it with crumbled pecans. I had a taste for my turtle brownies i usually make, but didn’t want to go through the hassle in the middle of the day. This was perfect. i cooked it on 2 mins and it was delicious. thanks for sharing :)
Hi, I made this recipe for the first time a few days ago… DELICIOUS!!! I am 12 and enjoy trying new things, and this is definitely one of the best mug cakes I have ever attempted. (It was superbly better than my old brownie in a mug recipe.)Our microwave turntable thing doesn’t turn, so I put the brownie in for 30 sec. on 3 sides and it still came out great!
i recommend using powdered sugar instead of regular sugar, using a little less cocoa powder and putting some chocolate syrup on top after it’s cooked
It was a bit bitter to me. it didnt taste like a brownie from scratch like i was hoping. did i do something wrong or is it supposed to taste more bitter?
I replaces flour with a partir of almond flour and coconut flour, used light cocoa and diet sugar. Still tasted Awesome!

With brownie mix (or cake mix), you just do 1/4c mix, 2 Tbsp oil, 2 Tbsp water. It’s a common thing to make on weight watchers, since you can enjoy the sweets without the temutation of going back for seconds. ;) of course, on weight watchers, it’s made in a Dixie cup, and the amounts are 1/2 of this. Lol
Extra virgin worked fine for me. I recommend adding more cinnamon and using ground cloves aswell. great with triple choc ice cream and Hersheys fudge sauce

I’ve eyeballed this recipe for several months, always skeptical that a mug cake can deliver an actual brownie. But when you want a browine *now* you do whatcha gotta do. And I have to say, this more than delivered. I added a few chocolate chips and chopped pecans but otherwise followed the recipe closely. This one is a keeper.

I’ve tried so many mug cake recipes in the last year or so and this is the one! It turned out incredibly moist and delicious! I added a couple of chocolate chips also. Make sure you mix the ingredients fully!

I followed the recipe, once I took it out of the microwave to wasn’t cooked like its supposed to… it came out squishy,raw and I tried it doesn’t taste bad, its actually pretty good.. I am bummed out ’bout it and not sure why this happened. It could’ve been the mug I used,recipe or my microwave. My microwave I believe is 100 watts so thats probaly got something to do with it.
I made some for Mother’s Day but my mom refused to eat it after one bite. I did everything right so I’m probably just a bad cook.
This recipe was delish! I used dark cocoa powder, only about 1 tbs real sugar then a few packets of splenda (came to aporoximately 1/5 cup sugar mix) and followed the directions the rest of the way. Microwaved for 50 sec on high wattage microwave. The dollop of whipped cream on top made it! The only problem I have is that I want to make this in a small ramekin that can hold 1/3 of a cup, and this recipe can’t be made in my ramekin. At first I was using lots of whipped cream with the brownie, but I figured out that it also tastes very yummy to just pour a little milk in the mug, after cooking. I use a little less sugar, too.
This is the best brownie in a mug recipe I’ve found…and I’m a dessert in a mug junkie! A few tips: use a white or lite colored mug. I’ve found the best bake is with that. Also, stir the dry ingredients really really well to remove clumps of cocoa and flour! Definitely DON’T use olive oil…the taste is so incredibly overpowering.Lastly, this makes a large single serving. You can successfully half the recipe and put it in the micro for about 50 seconds at 1000 watt if you want a half of a serving. Pair this with ice cream and you’re in heaven!

Amaaaaaazing!!! I use coffee sometimes in place of the water and have experimented adding almond and vanilla extract, little scoop of chocolate chips, nuts, etc. I’ve also halved the sugar and still find it delicious! The texture is so moist, definitely the best brownie in a mug recipe I’ve tried. I cook for 2 min and top with ice cream for a perfect sweet tooth satisfier!
I don’t know what the negative comments were about but this is a good recipe. I , personally would shave off some of the sugar or maybe add Splenda as another commenter did. It is a really good late night snack or craving. I had this with coffee. Satisfying. Thanks for posting, will keep this on hand.

This recipe is wonderful! Just the right amount for a sweets craving. I replaced the sugar with splenda and microwaved it for 1 minute 20 seconds. The brownie came out incredibly moist! Topped it with white chocolate ice cream and it was fabulous. Thank you for the awesome recipe!

I’m so surprised at the negative comments that I had to add my positive one, the recipe came out really well for what it is. I used avocado oil (which makes it healthy ) and followed the recipe ingredient for ingredient. This came out well and was delicious with some vanilla ice cream. I think I may reduce the sugar a bit if I make it again. All in all, a much better option than making an entire batch of brownies when you want a sweet treat late at night.
OMG! I just made this and for lack of ice cream I put some nonfat cream cheese and a little butter melted on it and wow! Delish! So easy! I love love love dark chocolate and keep Hershey’s dark cocoa on hand plus tons of baking goods and this is super easy! If you haven’t tried this, try it soon! You won’t believe it! Luscious!

I LOVE it. Can’t think of anything negative to say for it. I put a couple spoonfuls of frozen coolwhip and it totally rocks. :)

Too much cocoa and not enough sugar
It’s AWFUL I tried to do it but it was jelly I don’t think that its my problem its the recipe’s problem …. I am now struggling and I have to eat it …… DISGUSTING!!!!
This recipe comes out very gummy and starchy as there is too much flour in the recipe. There is also not enough chocolate flavor. I would suggest putting any regular brownie recipe in a mug rather than using this one.
Put a scoop of cream cheese for a cream cheese brownie.. it’s good!
Story time…. I tried to make this recipe for my little sister, and, having tried multiple variations of brownies in a mug, I wasn’t expecting much. However, this was HORRIBLE. First of all, when I made it, the batter was insanely dry. But the kicker was when we went to cook it. Our microwave is fairly high powered, but after about a half-minute of cooking, the thing started to smell. I stopped the microwave and it was not burnt, so I continued to cook it. AT ONE MINUTE (Still forty seconds to go) it started to smell AWFUL. I again opened the microwave, but this time a big puff of smoke came out of th microwave. THIS THING WENT FROM COMPLETELY RAW TO BURNING IN LESS THAN TEN SECONDS. My entire house smells like the pillsbury dough boy lot my house on fire. I have no idea what the hell went wrong. I followed the recipe exactly, and all it got me was ten minutes of watching my ten year old sister jump around with a towel trying to fan away smoke from the smoke detector.
This is a good starter recipe but the ingredients need to be tweaked a bit. Substitute melted unsalted butter for the oil, rounded 1/4 cup of sugar, and 1/4 tsp of vanilla. I don’t measure my salt but I prefer a bit more than a pinch because it rounds everything out better. :) Great for my late night sweet tooth attacks!
I enjoyed the cakey fudgy texture, but it was very bland and not sweet at all.

I discovered this recipe about 9 months ago and, I must admit, I make it a little too often. It’s my most, most favorite dessert-in-a-mug!
Works great also with 2 tbs peanut butter instead of cocao and with a llittle bit more flour and less oil.

I found that the recipe tastes a little better with milk rather than water and a 1/8 of a cup more sugar…
the inside was quite soft as i needed but the top was quite curstad-ish…anyway i replaced the oil with melted margarine and milk instead of water…but all in all i’m just gonna melt some chocolate on em later on and let it swim in em…thanks alot tho…saved a craving college student…

I really enjoyed this recipe. The texture and flavours were all good and rich. The only changes I made were lessen the time by 15-20 seconds (to avoid dryness), and I also added dark chocolate chips to the top when it was out of the microwave. Too good :)
I tried to make these. I have an incredibly powerful microwave, but I’m not sure how many watts it is. The first time I did it for 1 minute and forty seconds, it started smoking and I had to wave at it with a towel so as not to set off the smoke detector while people were sleeping. Needless to say, that attempt was burnt horribly. I tried it again, this time for only one minute. It cooked okay, and I was feeling optimistic. But it just tasted like sugar, flour, oil, cocoa, etc, and the texture was that of sugar with a little bit of water mixed in, or just super grainy brownie batter… Super disappointed! I guess it must have been my microwave or something. Thanks for the recipe though, it was an adventure. :)
Made this… Put it in the fridge until cooled and it tasted exactly like a little debbie cosmic brownie (Without the icing of course) Absolutely delicious I make it all the time.

this turned out great!! i made it in less than 5 minutes and it was cooked in 60 seconds! i topped it with some fresh raspberries from my garden.
I replaced the coaco powder with a teaspoon of vanilla and it was DELISH!
My favorite mug recipe, hands down! Topped it with some Cookies’n’Cream ice cream and am now fighting the urge to make another one! ;)

Maybe it was the lack of egg or something, but I personally didn’t like it. :( I just made it right now (the only difference is I cut the sugar by half and added mini chocolate chips), and the texture was similar to that of a dish sponge. Although it was soft and definitely not rubbery, the texture turned me off. Also, it was more cake-like, and I was looking for something more dense. Nonetheless, this recipe worked for many people, so do give it a go :) These are just my opinions.
I just tried your recipe with a few swaps. I don’t eat processed sugar so I swapped the sugar for 3 Tbsp of honey and I used melted coconut oil for the oil. Tasted delicious. I found the coconut oil heated up really fast and 60 seconds was just enough. I might even try it for 45 next time as the top seemed a little too cooked. I got WAY different results using good quality cocoa (camino) vs cheap cocoa (fryers). Just saying. Would be delicious with some whipped coconut cream or with a Tbsp of natural peanut butter added in.
This turned out to be SO RICH. I could hardly make it through half the mug.
It’s still really tasty though!
Perhaps I’ll try to cut the recipe in half next time.

I read all the comments to get ideas for add-ins and had to laugh at the few people who were so negative. Apparently, your terrible and flawed recipe almost burnt down one person’s house and its failings made another person’s children cry for 3 hours! You just can’t make this stuff up. Oh, well–you made me and a ton of others very happy with this recipe. I guess just we all made some kind of mysterious error and the recipe worked like a charm for us!

Just my experience but I find half a recipe to be plenty for me, especially if topping with a teaspoon of peanut butter, then ice cream. So delicious! Also, I’ve usually used 1/2 the amount of sugar called for (so 1 Tbsp for 1/2 recipe, which is plenty of sugar for me. :). In my microwave I cook for 25 seconds and am left with a nice moist brownie. Too long and it dries out very quickly! And, you can use butter in place of the oil.

Made this last night because I was craving something sweet. We don’t own a microwave, so I intended to eat it raw. Used coconut flour and coconut oil in mine and threw in some semi-sweet chocolate chips and just ate it right out of the bowl! I also only made half the recipe and it was plenty. THANK YOU!

I add coconut, chopped pecans, sometimes carmel sauce, or even mini marsh mellow add what you like but remember if it is something dry you are adding then increase moisture. Have fun with it! Not all microwaves cook at the same rate so you may have to experiment with time. I love to top it with vanilla ice cream or real whip cream. This is addictive stuff but oh so quick when kids are around you can make it into a little brownie in a mug party, while each is working on getting theirs ready put one in microwave. Two minutes tops depends on your moisture. This turned out like a gummy cow turd. Worst “Brownie” ever.
This was the perfect single-serving sweet tooth satisfying treat! I actually don’t think I’m doomed…just the opposite! This saved me from making a whole pan of brownies which would then sit in my kitchen and I’d be obligated to eat and probably finish off all on my own.
I put it in my microwave for 1:20, it was perfect. I also forgot to put my cinnamon in but sprinkled it on top…totally fine. 3 things I’d do different is use coconut oil instead of canola, use half coffee instead of water, and add a couple pinches of salt.

Thankyou so good!I tweaked it just slightly by using half and half instead of waterand butter instead oil.i also left ou the cinnamon.i added 6 drops of vanilla.it tastes a lot better this way!after you have done the top things i posted you can make a sweet sauce to go with it.1/3 cup half and half,1/4 cup confectioners sugar,and 1 tablespoon of white sugar.add those ingredients together then whisk for about 5 min..rake the brownie about 5 times then pour sauce in.PERFECT!!!
OMG! Tweaked just slightly. Left out the cinnamon, because I used Orange extract instead. Used Xylitol, which can be substituted in most recipes one for one…has much less calories and good for diabetics.
Started with 60 sec. then added 20, then 20 more. So, 1 min 40 sec.
Amazing! We will have this with homemade choc chip ice cream later :)

I also made “white” or vanilla “cake” with 1/4 c self rising flour, 1/8 c sugar (so half of the sugar), 1 tbsp (dry, unprepared) vanilla pudding & pie filling mix, pinch of salt, 1/4 c water, 1 tbsp vegetable oil (so half of the oil), 1 tsp vanilla extract. I split it into 2 small ramekins and microwaved each for 1 minute each.
Just tried this for the first time. Great with a heaping spoon of marshmallow cream on top instead of ice cream. Thanks for the recipe.

OH MY GOD this is the most delicious thing I’ve ever had in a coffee mug… I have a major sweet tooth and brownies are my favorite thing to bake. Being able to make this (and actually have it taste phenomenal) is a big win for me! I can eat a whole pan of brownies to myself…which is HORRIBLE whey you think of it….but this is PERFECT. One mug, one delicious brownie…craving satisfied. I finally made this tonight and I am glad that I did. It is delicious! When I try it again, I think that I will add some freshly grated ginger. Another alternative could be some toasted coconut. Nothing wrong with the original recipe, though.
I was super pms-ing and out of ingredients to a full on chocolate cake so I thought I’d try this. I was loathe to see that much oil in a cup and took a chance on a mashed banana… OMG!! Not sure if it’s cooked enough because it’s a bit more to the gooey side but I’m in heaven. Whipped up 2 tablespoons worth of coconut icing on top. It got all melty. Chocolatey/banana/coconut heaven :)

I’m not sure what chocolate powder is. Cocoa powder is unsweetened. If chocolate powder is already sweetened, then if you try to substitute, you’ll want to omit the sugar and increase the amount of chocolate powder. You’ll have to experiment to find out what the right ratio is for your ingredients.

I’m assuming the hot chocolate powder already has sugar in it? If so, you would want to increase the amount of powder you add and decrease the amount of sugar. Good luck!

Hi! I’m from South Africa. Just tried this, well a tweaked version anyway. Replaced cocoa with Nesquik & oil with melted butter. I left out the vanilla extract – we don’t have vanilla extract so readily available & didn’t want to use (synthetic tasting) vanilla essence. Oh, I also added some sliced almonds & whisked ingredients as opposed to just stirring. It turned out wonderful! A little more chocolate cake than brownie, but still awesome. I’m thinking tomorrow night I will add some choc-chips or a little melted chocolate to see if I can get it “fudge-like”. I’m so glad I decided to google egg-poaching today & found your website.
P.S. Poached egg came out perfect in plain, swirling, boiling water!

I use powdered instant oats instead of flour, 1/8 sugar only and use dark chocolate to reduce guilt…it taste wonderful and moist

I didn’t think it needed so much sugar – used only 2 Tablespoons of sugar and it was still sweet and chocolately. And for what it’s worth, my microwave cooked perfectly in 1 minute 30 seconds.
Hey, I know an even easier brownie in a mug recipe. You just take 1/4 cup flour, 1/4 cup white sugar, 2 tablespoons unsweetened cocoa powder, mix the dry ingredients, add 2 tablespoons canola oil, and 3 tablespoons of water. Mix well. Microwave for about 1 minute and 40 seconds and Voila.
This would be delicious with chocolate chips in it!
Hands down the best brownie in a mug I have had. It came out to more of a cake consistency, but it was a light, fluffy cake. I used French hot cocoa mix instead of plain cocoa and a little less sugar to make up for the sugar in that. The result was sinfully good.
I just made it and it was great. I added a few mini marshmallows into the mix once it was smooth… a rocky road approach…delicious
i didnt have sugar or cocoa so i just used 4TBS of NesQuick and it did the trick.

I just tried this tonight. My only variation was an addition of espresso powder, just a pinch, and let me tell you….this was divine. Really hit the spot!
I tried the recipe as written– my husband said it was “bland”– so after a couple more attempts this modification was deemed “delicious”– use 1/3 cup brown sugar instead of white sugar, use 1/4 teaspoon vanilla and 1/8 teaspoon salt, use 1/4 cup weak coffee instead of water– and add about 2-3 tablespoons of chocolate chips or broken pieces of a chocolate almond candy bar. Rest of recipe is the same. I divided the mixture into 2 cups and microwaved for 1 minute. Yummy after removing from microwave, yummy after cooling and yummy the next day.
All of those modifications sound fabulous! I often add a touch of instant coffee, salt, and even cayenne to chocolate desserts, to intensify the chocolatey-ness and to give it some zing.
Just made one with coconut oil, and it tastes really complex!
I just made this. It’s freaking amazing and soooo yummy. However, i didnt have the main ingredient, cocoa, so i added nesquik instead and it still tastes amazing. I also added a pinch of baking powder to make it grow just a little bit. It is so yummy and very very easy to make. I recommend this for everyone to try.

Thanks – I got rave reviews on this. Recipes with eggs weren’t so well received (it’s too much for a small batch, I think). We only had brown sugar and coconut oil around on this particular evening and those worked out well.

Living proof this can be done by a man. Turned out delicious after the first attempt failed on pouring about 10 grams of cinnamon. :D As an engineer specifically the amounts were useful, keep up on the good custom of giving amounts in grams, this way every meal could be man-proof. :)

The taste was great, and hot out of the oven with a spoonful of vanilla ice cream was fabulous.
But the consistency was soup.
How can this wonderful concoction be made in an oven?
I don’t think it can. It needs the microwave to “boil” the moisture in the batter creating air bubbles which become the leavening. You might look for a standard brownie recipe and cut back the ingredients to the point that they fit in a mug if you want to make it in a normal oven.
You can also substitute sugar+cocoa powder+oil for 1/4 cup semi-sweet chocolate chips. Just used it and it worked fine. Wife also substituted the cocoa+sugar for cocoa drink mix.
Me and my friend tried this recipe and we felt it was a little bland and we got stick of it. I recommend using an egg to get the brownie taste…
I cut the recipe in half. That translates to 2T flour and 2T sugar which makes it easier to remember plus I feel less guilty eating it. I also use half ww flour and half white and a little less than 2 T brown sugar for a more moist brownie. I use coconut oil and add maybe a 1/2 t instant coffee and a few chocolate chips for that melty, creamy chocolate in each bite! Microwave for 30-40 seconds.

Hello Hannah, I wouldn’t know about that, having never been to an alpaca farm. BTW, it’s “an” alpaca farm, not “a” alpaca farm. And it’s “and tastes like it too” not “ands tastes like it too”. That said, if it smelled to you as bad as I would expect an alpaca farm to smell, then I suggest that perhaps you are either not making it correctly or you are using old, rancid ingredients. Yes, it’s not as good as a regular brownie baked in the oven, but it’s not bad either, especially with a little cream or ice cream.

Thanks, this was so good! Just a tip, you can substitute the unsweetened cocoa for sweetened hot cocoa mix. Just did it because I couldn’t find cocoa in my house and it came out great. I didn’t put in 1/4 cup of sugar, only put in a pinch because I thought it might come out too sweet between the sweetened cocoa mix and all the sugar. And I added a pinch of nutmeg! So great, thanks again!

I hate to be the grinch here, but … 2 tablespoons of oil for one brownie? Yikes! Using the USDA Nutrient Database, I calculated this recipe to contain 28 grams of fat and 581 calories (excluding the vanilla extract and cinnamon – and ice cream, of course). That’s not as bad as, say, the Triple Chocolate Meltdown at Applebee’s (48/820), or the Brownie Bowl at Uno’s (53/1160), but it’s still more than I’d want to indulge in very often. I’d suggest trying applesauce for at least partial replacement of the oil. A “regular” brownie recipe doesn’t have that much fat in one brownie, so I don’t see why this needs so much.
Also, I have to agree with the commenter on the taste of canola oil. Canola oil does not have to be old or rancid to taste nasty. I have always found canola oil to have an unpleasant flavor (that is different from rancidity) and never use it myself. I would suggest rice bran oil, coconut oil (as others suggested before me), or “light” olive oil, which has none of the strong fruity flavor of extra virgin olive oil. (It’s “light” in flavor, not calories or fat content.)
A final note — it’s not a brownie, I know, but a good healthy “fix” for a chocolate craving is chocolate soy milk, hot or cold. I’m partial to the Pearl brand from Kikkoman, which has intense chocolate flavor and is organic to boot. An 8 ounce glass gives you 8 grams of protein and has only 4.5 grams of fat and 150 calories. (No, I don’t work for them — I just love the stuff!)
Soy? Healthy??? Might want to do some research on soy and it’s estrogen inducing properties – estrogen dominance/hormone imbalance. My understanding is that unless it’s fermented soy, it’s probably not as healthy as we want to believe. Almond milk seems to be a better alternative, but avoid any with carageenan.
I have found out that for my kid and me. That extra virgin oil does work ok. But then, I tend to use it alot in cooking.

You might try that new sugar stevia blend that they’re selling these days. Stevia is a naturally sweet herb. I’ve even grown it myself. C&H is one brand I know of. My mom has been using this blend to make her hot cocoa. Careful on the substitution though, I think you need less of that mix for the equivalent amount of sugar.
Just made this, halved with half milk and half cold coffee in place of water, dutch cocoa, and brown sugar for white. Such a tasty, moist, quick treat, and super topped with a scoop of raspberry sorbet. Thanks for this!
Ok, made this again today. This time used coconut oil and regular cocoa. Results were not cakey, but remarkably fudgey and brownie like. What a delightful and dangerous little novelty!

I have been enjoying this Brownie In a mug recipe…so handy when craving for something chocolatey after dinners….however I don’t put it in a mug for better look! Try it in a white shallow bowl just enough to reach the brim..more appetizing!
All I could taste was the canola oil, it was foul. Maybe it’s supposed to say 2 TEAspoons? Except that picture sure looks like a tablespoon of oil.
2 tablespoons it is. If you are tasting the canola oil, that is an indication that your canola oil may be old and a bit rancid. Canola oil shouldn’t taste like much of anything on its own. But it does go rancid rather quickly.
double this recipe in a bowl or I prefer a measuring cup as it has a spout and pour evenly into 8 kid’s size ice cream cones. Make sure you have the flat bottom ones, as they stand up easier. Cook all at once with a plate or something under them for 2min 20 sec on high (1000w) and let stand for 3-5 min. Serve with a scoop of your favorite ice cream on top and you have a killer snack with out having to clean up a nasty mess out of a coffee cup.

I didn’t have Cocoa, or all purpose flour, and I wanted to use coconut oil instead of canola so the items I used were
around 3 table spoons Carnation Good Start Chocolate breakfast mix (LOL)
1/4 cup Wheat Flour
1.5 table spoons Coconut Oil
2 table spoons of sugar
a little more than a pinch of cinnamon (it accidentally spilled out)
a little more than 2 drops of vanilla extract (didn’t have a dropper)
and a pinch of salt.
I also used a small bowl instead of a mug since most of my mugs seemed too small for the mixture. It took about a minute and 30 seconds or so. The result was extremely moist so the texture isn’t like most brownies, but I still liked the taste. I know it isn’t your recipe exactly but I followed your recipe as much as I could, so Thank you for sharing :)

I have been making this cake for about 4-5 times since you have posted it and I t t was delicious and never failed although I wasn’t sure about the quantity of some of the ingridients.And anyways I just wanted to thank you about converting them into grams , I also wish you could make some other recipes that are not in cups or quarts because grams in my opinion is much easy to work with.
I think I totally failed with this. I tried it two ways, one with no egg- it was ok, but seemed more of a paste than a brownie. The second was with an egg and it seemed like a chocolate bread pudding. It was too eggy. What did I do. Full disclosure, the container that my flour was in wasn’t labeled, ( and i have the worst memory), so i’m not sure which type of flour it was inside. I know, I know, I’m such a bad baker! Was the mystery flour the culprit, or just my fail cooking skills?

Microwaves vary in their power, so yes, for your microwave, you will need to zap it less. Start with 30 seconds and work up.
Must admit i have never commented on anything. and after many many attempts at microwave brownies this is the absolute best i have tried, soo awesome ;-D
FYI, I took out 1 spoon of the oil and replaced it with a spoon of peanut butter…also replaced 1/2 spoon of cocoa with a 1/2 spoon of hot chocolate powder, and put in a little less sugar…turned out awesome!!

I loved my mug cake but I added chocolate frosting when it was finished. It tasted really good you should try.
Tastes pretty good, did this with Cadbury Mint chocolate powder, was the only thing we had around, tastes a bit too minty but yeah that’s my own fault.. Texture was a bit too hard, but still tastes pretty good. I wish it’d be softer!
I just made it. My mum loved it, it was just perfect. In addition I used yeasted flour so that it rose a little bit, and didn’t put any cinnamon (didn’t have it). The only thing she complained about was it was too much :)

This recipe is great and provides you with a real brownie – no messy sludge. Tastes just like your traditional cocoa brownie, but takes only a few minutes to be done.
I made one change to the recipe, which was to add a 1/16 teaspoon of baking powder to the dry mix, to make it cakier. Also, this brownie is a big single serving, I was surprised how much the batter expanded!

Yeah…. Both my kids wanted one, and another one, and another one (they got one each and had to share a second one). I love that it’s lactose (and fructose) and egg free! I’ve been having so much trouble lately due to various food allergies and intolerances and what not, but now at last I can have a sweet chocolate something I won’t regret an hour later!
I’d like some troubleshooting help though, ours turn out very rubbery, even if they’re not fully cooked. Do I have to cook them longer or is that just the trade off for cooking them in the microwave? It’s not a huge deal because they’re so fast and really more of an “emergency treat”, but if there’s a way to make them less rubbery that would be awesome!
If they are rubbery, I would cook them a little less. They definitely have a different texture than regular brownies though, so you may have to make do. I do recommend pouring cream over them or serving with ice cream. If you’re dairy free however, then perhaps adding soy milk?

I actually suspect it’s the flour I’m using as I’m in germany. I’ll try swapping some of my flour for starch and see if that makes a difference, and I may start mixing them in a bowl and pouring the batter into a mug in case I’m stirring them too long. If that doesn’t work I’ll go the other direction and try a flour with a higher gluten content.
I also wanted to say that I often make cupcakes in small jars, the trick to getting a good seal is to remove them from the oven one at a time and have the lid right there, some will not seal, so we eat those first. But those that do seal well, really retain a lot of moisture, so if they’re chocolate they’ll be really dense, almost like a flour-less chocolate cake. They are amazing when you heat them in the microwave (remove the lid first!) and top with ice cream or ganache (just heat some cream in a small dish along with the cupcake, add chocolate, stir until melted and mixed well). So, if all else fails a stash of cupcakes in jars is a definite option :-)
Is it suppose to be so mooshy? And it’s kind as if I’m eating molasses TT . TT did I do something wrong or am I just not loving what everyone else is?? I tried cooking for longer after I found it way too mooshy and it didn’t do anything >___<
If it’s too mooshy, you probably need to cook it longer. Also, if the taste is off, check your oil and make sure the oil isn’t rancid.

Wow this is just great recipe! My 4 year old granddaughter did it! A bit crumbly when forked by who cares…can be eaten with a teaspoon and with ice cream….super!I think a smal shallow and bit wider bowl would be great for serving instead of a mug….now I will be hang up n looking for that perfect sized bowl for one recipe! What about a rising agent like baking powder or soda ?
If you want the brownie more cake-like and less dense or brownie-like, then yes you could add some baking powder. But it’s not necessary for this recipe.

Just tried this. Wow! So good. I have tried a lot of other brownie and cookie desserts in mugs and they always came out way too dry. This one came out just right. I topped it with melted Nutella to make it even better!

For those of you out there who are unable to eat gluten like myself, I found that substituting the flour to self-raising gluten free flour of the same quantity worked really well. It produced a light delicious brownie that was still soft and sludgy!

OMG, I am now a microwave-brownie-in-a-mug junkie. I have been making this almost daily changing/tweaking ingredients to see what brownie monster I can create next. I put a pinch of baking powder in the mix and was surprised how much the final product rose to, but not over, the rim of the mug. Soon I will be adding Kahlua in various amounts to see what I prefer, and if it gets too dry…spritz it with Kahlua . When I run out of cocoa, I guess I’ll have to go cold turkey!
I just made this using a little more than 1/8 cup of Kahlua and a little less than 1/8 cup of water and it came out absolutely perfect!

In my earlier post above I mentioned I have a recipe for Microwave cake. Here it is.
MICROWAVE CHOCOLATE CAKE
This is not a mug cake, but a small round glass or corning baking dish cake.
1/4 c. Hershey’s cocoa
2/3 c. hot water, divided
3/4 c. plus 2 tbsp. all-purpose flour
1 c. sugar
1/2 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
1/4 c. plus 2 tbsp. vegetable oil
2 tsp. vanilla extract
Grease round micro-proof baking dish, 7 1/4 x 2 1/4 inches or 8 x 1 1/2 inches; line bottom with plastic wrap (it doesn’t melt). In small micro-proof bowl combine cocoa and 1/3 cup water; microwave on high (full power) 40 to 50 seconds or until slightly thickened.
In medium bowl combine flour, sugar, baking soda, baking powder and salt. Add oil, remaining 1/3 cup hot water, egg, vanilla and chocolate mixture; beat until batter is smooth and well blended. Pour batter into prepared pan.
Microwave on high 5 to 6 minutes (time is for 600 to 700 watt microwave ovens (reduce time for 1000W or greater microwaves) without turning 90 degrees until cake begins to pull away from sides (some moist spots may remain but will disappear on standing). Let stand 5 minutes, invert onto serving plate. Peel off plastic wrap, cool. Frost.
Make two and you can have medium-round chocolate cake and you can frost and decorate it like any larger cake.
This is a pretty foolproof recipe I make when I just have to have chocolate cake. Enjoy. By the by I don’t know whose recipe this is as I’ve had it for six years or so, so feel free to modify it and make it your own. I think adding a few tblsps of coffee and/or chocolate chips or chopped Andes Mints or cut up Reese’s Mini Pieces to the batter would be interesting modifications. I have used smooth and crunchy peanut butter to the in between layer frosting and deep semi-sweet chocolate frosting for the outer. Delicious. Email me if you do modify it so I can note them.
Being a normal pregnant woman, I have craved something chocolate all day, but I knew I didn’t have the ingredients to make a good, chocolatey dessert… or so I thought. I just happened to run across this recipe while reading through my Flipboard about ten minutes ago, found every ingredient necessary to make this, and was enjoying a brownie in 5 minutes. These were all ingredients I keep in my kitchen at all times, so I’ll definitely use this recipe again when another chocolate craving attacks! I loved how quick, easy, and delicious this was.

I’m pretty sure that will increase cooking time. I find in general that when I add more things to the microwave, it takes longer to cook.
Use coconut oil. It’s a wonderful complement to the cocoa in this brownie. :p

Pour your morning hot coffee in the mug after eating the brownie. It soaks the mug clean and makes some yummy coffee!
Just tried this recipe tonight. The cup got very *very* hot in the microwave, to the extent that the glaze on the half of the cup that was not exposed to brownie developed a fine line of cracks (“crazing”). Highly recommend using a pyrex or commercially produced mug as pictured.
Any tips on reducing the sugar in this recipe or using substitutes? Thank you.

My grandson (14 yrs.) makes a similar concoction. You forgot to mention letting the mug soak in soapy water as part of the cleanup.
Indeed! Yes, soaking the mug in soapy water is essential. The brownie gets a bit caked on.
I didn’t find that it was needed to soak the mug. I just rinsed it out with hot water and wiped it with a dish rag and it all came out.
So I accidentally grabbed the wrong bag of flour and did this with self-rising. It scared me for a minute as it puffed up well over the top of my mug as it cooked, but results were still very tasty! More chocolate cake in a mug than brownie, but delicious all the same, and now I have an excuse to make it again soon to test the real recipe. ;)
This recipe is much too simple, thus much too dangerous for a chocoholic like myself! Yikes!
I learned how to make this years ago, and my revamped recipe includes an egg, along with other changes:
1/4 c. Unbleached Flour
3 Tbsp. White Sugar + 2 Tbsp. Dark Brown Sugar, for the “sugar”;
2 Tbsp. + 2 tsp. Unsweetened Hershey’s “Special Dark” Cocoa, for the “cocoa”;
1/4 tsp. Salt
1/4 tsp. Freeze-dried/Powdered Instant Coffee
1 Large Egg
3 Tbsp. Nonfat Milk (notice I use nonfat, but it still turns out decadent)
3 Tbsp. Canola Oil
2 tsp. Pure Vanilla Extract
The longer you cook it, the less fudgy it gets, and the more cake-like it becomes. We like cooking it until the top starts to look “cooked,” with a bit of gooey fudge “sauce” at the bottom. Delicious with ice cream, or whipped cream!
*Note: I ALWAYS use a bit of coffee whenever I make something chocolate, as it helps the chocolate taste “richer and deeper.” You use just enough to enhance the chocolate, without actually “tasting” the coffee. I learned it from chef Ina Garten.
Do you use plain or self rising flour?
This is great for kids in dorms.
If I wanted to branch out to a gingerbread-flavored mug treat (no molasses — too gummy), would I just up the flour and oil amounts a little to make up for the volume of the cocoa powder?
My son makes these all the time to cure his sweet tooth!

Do you use self-rising flour, or does it need some baking powder to make it rise a bit?
You just use plain all purpose flour and you don’t need baking powder. Oddly there is no leavening in this recipe. I think the microwave boils the moisture creating bubbles which are the leavening in the brownie.
Also, most regular brownie recipes don’t have any baking powder or other leavening either. I guess that density is part of what makes them brownie-ish instead of chocolate cake.

Of course, I will be making brownie-in-a-mug all the while… just to keep my strength up. Let’s see, one could try carrot cake, ginger cake, oh and Kiss-me-pie in a mug!

There is a super simple cake-in-a-mug recipe that’s something like 1 box of angel food cake mixed with 1 box of any other cake mix. You put some of the cake mix in a mug and some water, then microwave. The key is the angel food cake, as it has powdered egg whites in it. Just a thought for those looking for an egg substitute…
I just made this the other night. It’s 1/3 cup of the mixture, and 3 TBSP of water, then microwave for approximately a minute. So easy, and good! Put the mixture in an airtight container, and it will last for a long time.
I have made this many times. SO simple. It is actually called 3-2-1 cake: My recipe is 3 Tbl cake mixture (as described above), 2 Tbl water then mixed well, microwave for 1 minute. And yes,chocolate chips and chopped nuts have found their way into the mug too (usually right after taking out of the mic). Have left the cake powder mixture in a plastic zippie bag for months with great longevity. Two mugs of cake, coming right up!!

Been there and still there. This thing is completely addictive for the simplicity and the richness of it. And when topped with some vanilla ice-cream and sprinkles or chocolate chips or caramel or chocolate syrup.. okay maybe I should stop now!

I made this tonight and it was very nice to take with me tucked into the couch. I will say that as the recipe’s written, they’re definitely cakey rather than fudgy brownies!
It’s actually better to add two spoons of Nutella instead of the cocoa, and put just a little less sugar…. Heaven on earth!

Sounds fun – some one wants egg, my guess is 4 BrwninCup wouldn’t add much time, one egg added to liquids for 4 couldn’t be bad, coffee would be a must and 2 or 3 semi-sweet chocolate chips(Ghirardelli unquestionably best chips and their boxed mixes are very tough to improve on.) on top of each would work.
I have a recipe for cake in a mug, but not brownies. The difference is in the ratio of flour to sugar and the cake mix has some baking powder and baking soda. I wonder if you could also add some walnuts or pecans to this? I’m going to make some tonight. Thanks Elise!

If you wanted the structure the egg brings, you could probably use on of the EggBeaters style products that’s actually eggs, but then you could add a fraction of an egg (a tsp or so?) which matches the other ingredients and their small proportion.
My recipe called for an egg and 3 tablespoons of milk and 3 tablespoons oil. You can also add mini chocolate chips. It cooked for 3 minutes at 1000 watts.
I tried a cookie in a mug this morning and it called for just the yoke of the egg…. wonder if that will work too….gonna try it tomorrow
Just made this. I used only 2 Tbsp sugar, and it was sweet enough for me. Also used coconut oil. I also used dark cocoa powder, because I prefer it, and it is better for one! I will be doing this again, just exactly the way I made it this time!
Agreed, it’s sweet enough with half the amount of sugar…just think of eating 1/4 cup sugar in one dish!
I just tried this with coconut oil and it didnt work out? its like the coconut oil didnt blend in with the rest and it didnt taste like anything just glue… :/

I did that same thing and it was gross. It tasted like how glue smells and overall gave it an odd taste.

The first time I saw it was 10… 15?? years ago when it made the email circuit and I mentioned it to my fiance a few weeks ago but just couldn’t remember how to make it!
