I made them this morning and they are now my favorite waffles!!! I have been wanting to make gingerbread waffles or pancakes for quite a while and this recipe did not disappoint! My husband agrees! Served them with thick sliced bacon and real maple syrup. The recipe made 7 regular sized round waffles.
Can a standard waffle iron be used or must it be a Belgian waffle maker?
I made these with coconut and almond milk and heaping spoonfuls of the spices and my famil loved them!
I made them, but used Almond Flour instead of whole wheat flour. Could this be why they came out flat? I am new to using waffle makers. Thanks!
Hi, Cara! Yes, I would stay replacing the wheat flour with almond flour could cause that. You should also check to see if your baking powder is fresh. I’ve made this for breakfast today they were good but I didn’t care for the spicy taste because I fond it a little to strong but I would make them again with less cloves.
Made these for breakfast today and they are fantastic! I was missing ground cloves and ginger so I used pumpkin pie spice and added a bit more cinnamon. They still tasted exactly like gingerbread:)
These are delicious!! And the house smells amazing when they are cooking also! They are so good that they don’t need any syrup or butter. Wonderful!

I had waffles for the first time when I visited Belgium. They are incredibly moreish, so crunchy and delicious. You have made them really well.. to perfection. Lovely recipe.
This is such a clever twist! If I don’t end up making gingerbread cookies, these are definitely on my to-do list this Christmas.
How about serving these with a dollop of lemon curd? That’s what I like serving with gingerbread, gingersnaps…. The curd can be cut with some whipped cream for an even more decadent treat.
