Store-bought Vs. Homemade Prepared Horseradish
Prepared horseradish has just three ingredients: grated horseradish root, vinegar, and salt. It's easy to make your own (and there's a link in the ingredients list on how to do so). But, let's face it, it's often easier to buy store-bought, and that's just fine for this recipe.
Make sure you're buying prepared horseradish and not horseradish sauce. If you're unsure, look at the ingredients list. If there's anything more than grated horseradish root, vinegar, and salt, don't buy it for this recipe. Also, look at the front of the jar for any heat indication. Some prepared horseradish is "extra hot." Unless you really love your horseradish sauce accompanied by watery eyes, you'll want to avoid the extra hot prepared horseradish for this sauce.

How to Store Leftover Horseradish Sauce
Tightly covered horseradish sauce should last 5 to 6 days in the refrigerator. The chives in this particular sauce are what give it a shorter refrigerator life. If you leave the chopped chives out and add them just as you're about to serve, it will last 2 to 3 weeks in the refrigerator.
