My husband loved the omelette I made. I added sliced ham & tomatoes, chopped onions & mild cheddar cheese. This was the first time for me. He loved that I added extra cheese on top and a dash of parsley. It tasted so good. Thank you for your recipe. 10/19/20

I have not made omelettes for about 4 years so this was a welcoming refresher course on how to make them.
I made the omelette with Spinach, feta , greek olives, tomatoes, and cilantro. Overfilled it a bit but once the spinach cooked down it was fine. I think I overcooked it a little because of the spinance. Next time I’ll put the fillings in sooner.

To make it fluffy, before the eggs are finished cooking, when they are still ‘wet’ but not runny, remove from heat and cover with a lid for about 3 minutes. The eggs actually continue to cook after taking them off the heat, the lid traps steam resulting in a fluffy omelet.
Yes it turn out perfect for me & my daughter.I added cheese & spinach to hers, and I put mushrooms, tomatoes & cheese to mind. Delicious but I would have liked it a little thicker or fluffy.
For a thicker omelet, use a smaller pan and lower the heat a little. It’ll take a little longer for the top to set (setting a lid on top can help), but I also think the thicker ones are naturally more puffed. Glad you liked this in any case!

Tried following the stuff at the beginning but they didn’t look like yours.
Looks yummy! i want to share spanish omlete recipe.
1. Take one potato, peel it and cut it into small pieces. chop 1 onion.
2. Add olive oil in a frying pan, then add potatoes and onion and stew gently, covered pan for 30 min.
3. Beat 6 eggs and pour mixture in the frying pan without stiring.
4. Covered pan for 2 to 3 min until it becomes fluffy.
5. when one is done then flip it to other side. Slide on to a plate and cool for 10 minutes before serving.
I find a minute or 2 under broiler sets the eggs very well
