I’ve done it both ways, and I prefer baking straight in the sheet pan. I’d much rather flip the bacon than have to deal with cleaning the rack, which never comes completely clean even in my good Miele dishwasher.

Sounds great and have done it before. But for even LESS cleanup, do it on the outdoor grill with the lid closed. Then you don’t even get the grease spatter in your oven.
We have been baking our bacon for 15 years and it is the best. We don’t use a rack or turn it and it comes out great. I am intrigued by starting it in a cold oven and will be trying that next time bacon goes in the oven here.
I have been oven-baking bacon for years, after I read a recipe from Cooks Illustrated. I do not use a rack, as I hate the cleaning up. I also line the baking sheet with foil. However, in my experience you do not need to flip the bacon at all. Honestly. I never have, and it is always really crispy! I do rotate the sheet through 180 degrees half way through, as my oven has a couple of hot spots. When it is done, I prop the pan up at one end to all the fat to flow away from the bacon to the end of the sheet. Easy clean up and fantastic bacon. Worth cooking extra as it freezes very well. Thirty seconds in the microwave straight from the freezer, and I have hot, crispy bacon again! Great way to cook bacon, thanks Nick!
