    I had a large five gallon bucket of lettuce leaf basil I picked and made a huge batch of pesto Monday night because the temperatures are going down and we were afraid we would be cut off power! So I was looking for recipes using pesto and tried this one. I had all ingredients on hand and substituted whole grain penne for the pasta and it turned out great!!

    I made this last night for a meatless monday dinner! I keep basil pesto in the freezer (no cheese) so the only thing I needed to buy was the avocado and some bread!

    I made this dish and had some leftovers, very good. Nice, light, easy to make! We added some shredded romano cheese, yummy!
