this salsa can it be processed by canning the finish product
No, it’s a fresh salsa. You can only can cooked salsas.
I make this but put it on a low heat in a pot for about 20 minutes then put it in the fridge over night for the next day. Usually have it with jerk chicken on a salt and pepper baguette with lettuce. Great summer sandwich.
This is the perfect summer food. I’ve been making this pineapple tomato salsa recipe for family, friends, and co-workers since it was put up here. It’s always a huge hit. I think it tastes incredible as written, and could eat a big bowl of it all by itself. One of my friends added mango with the pineapple and she said it was really good too.
My local market makes a great pineapple salsa similar to this one and it’s fantastic. Like Jeff I wasn’t quite sure of the combination of pineapples and tomatoes, but after one taste test, I was hooked. I’ll be trying this recipe next time I’m in the mood for a sweet salsa. Something about the prep work for a good salsa is very relaxing. It’s probably the rhythm of the chopping.
I recently grilled up a whole mess of quesadillas stuffed with Hatch chiles and queso fresca and served them with the pineapple salsa. The combination of the tortillas crisp from the grill, the stringy cheese, the smoked chiles, and the sweet salsa was quite a hit.
I can’t wait to try this one! My favorite pizza has bacon, green pepper and pineapple. The sweet pineapple compliments tomato and peppers wonderfully. I think I’ll try this as a garnish for smoked sausage on the BBQ!
Another great salsa to eat with my blue chips. Looks like Abby and I think alike. Also would be good in/on a salad instead of calorie laden dressing.
Yum! I’ll have to try this. Peach salsa is one of my faves – served with blue tortilla chips (bc they just look so pretty together!) I’ll have to add pineapple salsa to my repertoire. Salsa is such a great food – healthy, delicious and versatile!
Mango would be another great substitution. I make it all the time, and, it’s loved by all of my friends.
Mango is a very common fruit for the sweet/spicy combo–I wouldn’t do canned pineapple you’ll lose that special freshness! Tomato is a technically a fruit–google that sometime Jeff! (o: Oh sounds delish and so summery
Cantaloupe and lime is beautiful together. Not just salsa…for a delicious summer treat, slice cantaloupe wedges, spread them out on a plate, squeeze fresh lime juice on top as well as a little sea salt to bring out the flavors. Num!
Cantalope is another good substitute- a nice ripe, juicy one. This salsa looks yum.
Jerry, I am allergic to fresh pineapple as well. Maybe canned (gasp) would be an okay substitute?

Jerry- If your wife is allergic to pineapple, try using oranges, peaches or mangoes in place of. They are excellent substitutions. Each has it’s own “zing”. Yum.
I make a pineapple tomato salsa. I prefer very mild salsa, so I don’t put any chilies, just a bit of cayenne powder. I also add some red and green bell peppers.
