    I make this but put it on a low heat in a pot for about 20 minutes then put it in the fridge over night for the next day. Usually have it with jerk chicken on a salt and pepper baguette with lettuce. Great summer sandwich.

    This is the perfect summer food. I’ve been making this pineapple tomato salsa recipe for family, friends, and co-workers since it was put up here. It’s always a huge hit. I think it tastes incredible as written, and could eat a big bowl of it all by itself. One of my friends added mango with the pineapple and she said it was really good too.

    My local market makes a great pineapple salsa similar to this one and it’s fantastic. Like Jeff I wasn’t quite sure of the combination of pineapples and tomatoes, but after one taste test, I was hooked. I’ll be trying this recipe next time I’m in the mood for a sweet salsa. Something about the prep work for a good salsa is very relaxing. It’s probably the rhythm of the chopping.

    I recently grilled up a whole mess of quesadillas stuffed with Hatch chiles and queso fresca and served them with the pineapple salsa. The combination of the tortillas crisp from the grill, the stringy cheese, the smoked chiles, and the sweet salsa was quite a hit.

    I can’t wait to try this one! My favorite pizza has bacon, green pepper and pineapple. The sweet pineapple compliments tomato and peppers wonderfully. I think I’ll try this as a garnish for smoked sausage on the BBQ!
